Sugar (sucrose) is made of one glucose and one fructose molecule. Inverting breaks the bond between them and allows them to react with amino acids in the Maillard reaction,. This reaction makes lots of different compounds and is the one that turns food brown and tasty. Thank you - really enjoying your series. I made my first pipe today and one day, when I learn more, I'll try this.

You can read about this but there's nothing like seeing the process. Envy the time you grabbed a handful and drew a breath of the product. I imagine different tobaccos will recieve their own case recipe or will you stay with the basic. Thanks for your efforts. Its fun to watch. Good day.

Thanks Tom, I found that there is a lot of info out there but it is spread thinly throughout various forums etc. Correct, every tobacco will get its own casing recipe... although there will be similarities, ie the VGs will all get a white sugar whereas the burleys will all get a dark sugar.

I have never learned so much about a topic that I am pasainorw about as I have watching your videos. Thanks again.( PS) There is one thing that I wish you would change is please buy you a tamp that they use in fermenting vegetables to pack your tobacco in those jars. I have canned for many years and glass jars can weaken after many uses and you only have two hands.

Another reason for inverting the sugar is that it's more resistant to crystallization. If the sugar crystallizes it won't be helping your leaf stay in case.

Hi, I am not a tabaco smoker but rely on my partner and son for feedback as they are smokers. I had used your casting process to take the harshness out of the smoke with mixed results, I am wondering where I went wrong.cheers Phil

I enjoyed the video. I am watching it 2 years after its release. I have two questions. Have you left the tobacco in the pressured jars for a longer length of time? I can’t help but wonder if the flavor could be increased. Also, in the sugar inversion process, you used i believe apple vinegar to start the process. Does this vinegar give the tobacco a vinegar aroma that was often smelled in the USA McClellands tobaccos? Thanks. Thumbs up and subscribed.

Hi Mr. Simon Thanks for sharing this content with us it's really helpful. I'm using your recepy to case bright Virginia But I'm noticing some tongue bite even after the casing process. Am I doing something wrong? The process I'm using is casing the Virgina and dry it out right away, is that correct? Should I let the tobacco absorb the casing for a couple of days? Thanks in advance! Greetings from Brazil! 🇧🇷

I find that it takes a week or so for the leaves to change colour and I keep them quite moist rather than dry them to a level that they are smokable. I suggest also possibly try a double casing on a few leaves just to see if there is enough sugar being added. Patience is the key!

That was absolutely fascinating…most informative….you explained the process so well. I’m loving seeing the stages & processes you are putting this tobacco through & learning so much on the way. I just cased some “cheap” Farmer Tabak which was a bit dull flavour wise…so I sprayed it with a 50/50 solution of boiled water & Sweet Organic licourice Syrup from Denmark ( Lakrid Bulow) which I allowed to air dry spread on a tray. The taste is now really rather nice & IMO much more smokable. I can recommend the syrup.

See that’s a smart idea - cooking to merge flavour and to kill mould spores. I’ve been playing it safe and casing with navy rum to add the sugar and have to alcohol kill off the spores.

Excellent video. thank you for the details. however i am curious about the next step. what is the proper pressing conditions? after the stoving the leaves are very wet. should we press them in a wet condition or ahould we dry them completely prior to the pressing process? this series rulez.

I think the next video or two covers my pressing process. I think its best not to have the leaves too wet to press, but at the same time not brittle. I guess the texture of leather would be a good place to aim for!
