Demo using bottomless triple espresso shots showing how to improve flavor using flow control when working with a fresh from roast high-altitude specialty coffee. Using Ethiopian Yirgacheffee coffee 7 days from roast we use a long low flow pre-infusion to tone down brightness and pull more fruit flavors. We taste and compare a shot pulled with and without flow control on the ECM Sychronika espresso machine. Shots are logged using an Acaia Lunar scale connected to the Acaia Brewmaster app with real-time display.
