Gluten is a sticky protein substance found in wheat, barley, and rye.
Many people think being gluten-free is just a fad, and people are going gluten-free because it is popular, but there is some actual science and physiology that prove we are starting to have issues with gluten as a whole.
Gluten today has been hybridised, so it is not the same gluten our ancestors were consuming a couple of hundreds of years ago. It is a new breed of gluten our bodies are susceptible to. Five per cent of modern-day wheat is entirely new proteins that our bodies do not even know how to assimilate or utilise. We don’t have the enzymes to break those proteins down.
For people who are gluten intolerant or gluten sensitive, the gluten reacts with an enzyme in your gut which can cause bloating, inflammation, brain fog and creates an immune response that can make you feel tired and lethargic. So, if you eat gluten and are bloated, you could be likely gluten intolerant but without the systematic damage that occurs with a person with coeliac disease.
On the other hand, Coeliac disease is an autoimmune disease where the immune system reacts abnormally to gluten. Even small amounts of gluten can damage the small intestine lining, which prevents the proper absorption of food nutrients and cause serious health issues.
