As the Conquistadores asked for gold, we got the yellow variant of maize delivered to Europe. There are different color-types of maize: white, yellow, purple, + something I may not know of. But the Indigenos ate mainly purple maize. It contains a vitamin (flavanol) which the yellow and white variants lack. This further contributed to malnutrition in Europe on top of the lack of nixtamalization.

The Mayans didn’t care about gold. They were more invested in corn. The things is.. in the end, what matters the most is food. Gold or money can get you what you need but when food is scarce and is vital for survival.. whoever harnesses the power to grow crops is the real gold winner here. Gold or money is just an object.

Mesoamericans developed the process. I don't know how USA natives ever got the credit for it, but it's ahistoric.

@@music4thedeaf As were squash and beans. The "three sisters" method of cultivation originates with Mexican indigenous but people always give the credit to the Iroquois which is what I was referring to.

The crazy thing about corn, is it grows everywhere, literally everywhere, in Central Africa, South America and even here in the UK, which is about as different an environment as you can get.
@Rainer67059

Nope, corn doesn't grow everywhere. The corn breeds that existed at the time of Columbus, that the indigenous Americans had, they all grew nowhere in Europe but in the southernmost regions. They grew only in mediterranean countries. In Germany, they grow only in the Kurpfalz triangle: Karlsruhe-Mannheim-Heidelberg. The climate was borderline, so you don't get the best results. The corn that now grows in Germany and elsewhere are new breeds that are interbred with non-corn plants somehow or genetically modified. That's not the real corn. You can't get good results in this climate. Unlike the potato, corn needs warmth and sun, and much more of it than wheat. Wheat doesn't grow in Scotland and the North of England, so they plant oat there instead or use the land as pasture for cows and sheep and produce meat and milk. In middle and southern you can grow wheat but not maize, except for the most southern parts with inferior results to more favorable regions of the earth.
