I'm very familiar with this. My family every year would make mochi's and we called it mochi suki. All the adults would do the pounding and the older ladys and kids would roll and shape the mochi's. Still one of my favorite traditions🍡❤

Mochi has a heterogeneous structure of amylopectin gel, starch grains, and air bubbles.[2] The rice used for mochi has a negligible amylose content and a high amylopectin level, producing a gel-like consistency.[3] The protein content of the japonica rice used to make mochi is higher than that of standard short-grain rice. Mochi is similar to dango, but is made by pounding grains of rice, while dango is made with rice flour.
