'Hu Tieu' is one of the most popular things to have for breakfast in Southern Vietnam, but today our smiles come from witnessing the entire magnificent street food atmosphere here in Ho Chi Minh City as they do from any specific recipe.
Thank you for beginning this Vietnam trip with us, we could not be more excited!
The second part of our first meal in Vietnam, and if you are like us then you won't be able to help yourself either. Arriving at the hotel at 4pm is so tough, you're seeing street food stalls opening one by one and you just wish for the traffic to all disappear (but just long enough for you to get to your hotel room, and then back out again, because all that traffic kinda adds to the great situation in the first place :) ).
'Hu Tieu' is a dish you need to learn more about if you're visiting the southern parts of Vietnam, and for Ho Chi Minh City, the largest city in Vietnam, its a never-ending 24-hour progression of beautiful places where you could find this dish.
White rice noodles, a choice of pork parts (tonight its pork rib meat), and a quick selection of lettuce and some herbs constitute our basic bowls. Bumping up the flavor with additions of fresh lime juice, and pickled chilies, garlic, and ginger, this is an ultra-simple but always-satisfying way to start your Vietnamese noodle exploration.
Cheers, and see you again for more Ho Chi Minh city action very soon (next up, hand mixed salads, my favorite dish that we have found here so far!) - and I hope you are having a beautiful day today!
Much love, from Li and I,
see you soon.
