The flowers can also be steeped in boiling sugar-water and then strained out and the liquid boiled down into a syrup that is almost indistinguishable from honey.

From what I've found. The newer flowers closest to the ground taste the best.

Also if you take off the outermost green bits around the base of the blossom seems to reduce the bitterness and lets the sweetness come through.
