Honey Cappings Mead Recipe Notes
9-13lbs of honey (more honey usually equal higher alcohol)
1.5-3 qts of cappings
(we dont want more than 15 lbs of honey in a 6 gallon carboy)
1/4 c organic raisins
Zest and juice of 2 lemons
2 tbsp of loose leaf black tea chai steeped in boiling water 15-20 minutes, strained, then added in.
Water to fill line for 6 gallon carboy.
