A lot of people dont realize how much work goes into making good Central Texas Style BBQ. Having a little side food hustle myself here in Texas I can tell you its exhausting work but very rewarding when your customer's tell you how much they love your food. Do you do it full time? I’m trying to get away from working in the casino. I don’t mind offsets , some people prefer coal, I think that ruins the meats. Or electric, like pellets might be fine but the flavor might now be there

@@mattl7424 Its a hobby that requires a lot of prep to make it run smoothly. Here in Texas I'm always looking for felled trees Oak, Pecan and Mesquite logs. Then you have to get them home, cut them up and split them the the optimum size. Then you have to make sure you have a good store of seasoned wood because green wood will make your BBQ taste bitter. Thats how I cut my costs from buying a cord of wood thats guna cut down on your profit. Then you have to source your meats, which here in Texas isn't too difficult. You are going to be putting in at lease 14-16 hours combined just cooking all the meats. Thats on top of the time it took to prep everything and soure your wood. Then you have to prep and cook your sides and source all your containers to keep everything warm. You have to time everything so that your customer gets everything nice and hot. Then you factor in cutting and serving meats and sides and getting your orders out and walk in customers for me here in Texas. We serve from 10am - 7pm. So that's another 9 hours. You then have to do the hardest part, the cleanup. Lol Everything from the smokers to the kitchen floors, pots and pans, knifes everything gets a deep clean. Thats why BBQ is a labor of love and my family does it on and off because you are putting in a lot of work for not a crazy amount of pay. In other words you really gotta LOVE making BBQ to make it a business. Hope this helps brotha, if you still feel you wana give it a shot get organized and hit it hard. Saludos from Texas. ✌🏽✌🏽

Nice job! I ran a small catering business from home for more than 25 years, handled events up to 400 for dinner. Built a commercial kitchen in my home about 12 years ago. So I know what "kitchen carnage" is all about. The most important thing, as you demonstrated is organization . . . knowing what goes in the smoker, the warmer, the fridge and when so that everything is done correctly and on-time. Keep it small and personal . . . you won't go wrong!

No post oak in the U.K. i use white English oak. Abundant and great for smoking. Really can’t tell much of a difference from post oak!

Thank you to everyone who has watched, subscribed, liked and left a comment! A question I've seen frequently on here is whether we are allowed to do this, and whether there are any regulations in place. The answer is yes. In the U.K, you can set up a takeaway food business from home providing you have registered with your local council (you then have an inspection of your food prep, cook and storage areas) you also require things like a food hygiene certificate (I hold Level 2) and public liability insurance.

I am a former one-man-band off-site caterer so I have a fairly good idea of what it takes to produce (quality!) food in quantity You run an absolutely astonishing operation. Kudos and many thanks for revealing all your methods in detail... most generous! Cannot grasp how KZfaq's algorithms have kept you off my radar as I have surely watched more than 500, maybe a thousand BBQ vids. Unfair and subbed!

cheers mate! yeah it definitely added a little extra stress. There were quite a few things missed out, as you just get so involved with the cook - its easy to forget to remember to set the camera up. Like wrapping briskets, taking off beef ribs, making beans etc. Thanks a lot for watching mate!

I love the idea, very cool to see Texas style bbq somewhere so far away. Unfortunately in the US we wouldn't get away with this in a million years. Our 'cottage industry' laws let us sell certain foods from a home kitchen, but only things that can't possibly make you sick (mainly baked goods). Everything else is regulated and requires a commercial kitchen.

In texas, it is illegal to serve any meats under the cottage food laws. And it's illegal in most states.

Thank you for making this video. I smoke brisket and according to everyone it’s the best they have had and always tell me I need to open a food truck or something. I always wanted to but did not want to risk loosing my job. Well I was just let go from my job that I had for 15 years so now I’m looking into starting it up. For now focusing on just brisket and sides then after a while I will start other proteins.

Respect!🙌 legit Texas style takes days to prep and over 12 hrs of smoke on the brisket alone. I start my prep on Thursday and cook Friday just to eat with family on Saturday.

So awsome bro i grew up in tx for 33 years i lived there and was deported back yto mexico im 37 now.. And have been trying to do this same thing here andnu have helped me with better ideas on how to do so a little more efficiently.. Thank u

I make a lot of sausage myself and hate to sacrifice a link to get an internal temperature reading. The way I get around it is to use a umbilical type temperature probe and leave it in it until you get it off the pit for about 10 minutes. The sausage will cool down and all the juices will not run out. I'm from Texas and I would say that your food looks like something you would get here great job!!

Hello, from Cleveland, Ohio. You’re doing really amazing work from home, man! Be proud of everything you’re doing, because it’s a ton of work. Your spread looks absolutely killer. I really respect the system you’ve got going on. If you’re having issues with your stuffer not pushing out all of your sausage, consider disinfecting a large ziplock bag, filling it with ice, and putting it the stuffer to help get most of that leftover loose sausage into the casing. Keep killing it, dude. Much respect to your wife for helping you with service. Super cool of her!

Well done! I wish I could run a bbq business out of my home like that in my area, I have to use an offsite certified kitchen so I chose to build a concession food trailer that will allow me to work out of for all 4 seasons. This gives great insight on what goes into a proper bbq service.

17:08 You should consider using something like Hotplate, which fully automates that entire click and collect process. Prepping BBQ is enough work, I don't have time to personally communicate with every customer. Everything else is awesome and so thorough!!

I too am not sure how this ended up in my feed but so glad it did. The precision as it relates to the cooking process is on point as pointed out by the many commenters sharing their appreciation. Another thing I noticed was the attention to detail as it relates to presentation, or in the case packaging. From the butcher paper in the meat tray to the Wilson BBQ sticker sealing the paper bag you left nothing out. Very impressive you two, very impressive. Best of luck to you going forward.

Gret video, I'm currently unemployed...with a beautiful newborn girl, and need to make some money. I had the idea to begin a BBQ business just like you months ago but never started it. I love making BBQ since I live in the Mexico border with Texas (McAllen, Tx) I'm very familiar with BBQ, so let's see how it goes. And just to state that Texas style BBQ is an art, and does not have to be made by a Texan to be authentic Texas style BBQ.

You could use good ice chest that seal good and put the meats wrapped in the chests. Use cloth towels in there to absorb the steamy moisture. The chest will retain the heat for 6-8 hrs.

When u wrap the ribs, put some butter, honey and brown sugar in the foil. I also slather some in tabasco type hot sauce and use extra cayenne in the rub and everyone loves the spicy ribs.

That’s very much a Kansas/comp style rib. I prefer a slightly more traditional Texas style savoury rib - with a little glaze for added sweetness! Though I do occasionally make that style of rib for my family!

I have been contemplating on doing something similar to this, in my area no one has good BBQ, I may not be a Pitmaster but I have smoked up some good Que and I’m confident I have what it takes, I know easier said than done but this video and yourself and your wife are definitely inspirational, is there any advice you can spare ?

Great video dude ! Noticed your PK Grills hat on. I have an original and I absolutely love it. I use it for grilling, of course, but I use it for smoking meat just for the wife and I a lot ! I just turned 60 and I don't cook commercially any more. Just for family and friends and for some smaller(< 50) groups that I've worked with in the past for special occasions. Keep up the good work dude, I love seeing younger folks getting into slow smoking and grilling.
