Wine from Lydia grapes can be prepared at home. Homemade wine is always more natural and healthier than store-bought wine. One of the raw material options for homemade wine is “Lydia” grapes. There is an opinion that wine from Lydia is dangerous to health, since methanol is released during fermentation. This is true, but the percentage of methanol in the drink is insignificant. Therefore, if you do not abuse it, then no consequences will arise. We clean the collected grapes of debris, twigs, and remove spoiled specimens. Rotten berries should not be allowed to get into the wine wort. This can cause mold to form on the surface, and the wine will have to be thrown out. You should not wash the grapes; if they are too dusty, you can wipe them with a dry cloth. Wild yeast on the skins of the grapes is needed for fermentation, and they will be washed off with water. If you want to get a more tart wine, you can leave some clusters directly on the brushes and press it in this form. We crush the berries with our hands, a wooden pestle or a whisk to prepare building mixtures. We transfer the crushed berries to a large container; you can use a regular basin for these purposes. The main thing is that the container was filled no more than 2/3 of the total volume. Place the berries in a warm, dry place to start the fermentation process. At room temperature, the grapes will begin to ferment after 5 days. Squeeze out the pulp well and pour the liquid into a fermentation container. It should also be filled 2/3 with fermented grape juice. Add sugar, the amount depends on how sweet the wine should be. The wine wort will ferment for 3 weeks under a hydraulic seal in a warm, dry and dark place. After this time, the young wine is drained from the sediment. To do this, a thin rubber tube is used, through which the liquid is expressed.
Now the homemade wine from Lydia should brew well in a dark, cool place; a cellar is ideal. We pour the wine into jars or bottles, seal it and put it in the cellar for 30-40 days. This time is enough for the drink to brew. If a precipitate forms, drain the liquid from it again.
