Thanks! I like the 7 to 9 minutes too; it's less taxing to deal with than the longer casts but still presents a fair amount of information. I think most of the grape varietal and science/technical casts will end up in that range, but some casts for wine regions, especially the larger ones, will probably still drift over into 13-15 minute territory. Nicely done , after my surgery I don’t feel like a want to take my books , that why I enjoy to stop by and keep learning with out open a book , I need to study for my next exam so thank you Unknown Winecaster .

Hi Unknown, when we read the levels of PH, is it mentioned that level after malo or before malo? im assuming that the malo drops the level of acidity (ph becomes higher)..am i right? chheeerrss

The pH level on the technical sheet should be the pH after all wine making has been completed, including MLF. MLF does raise pH somewhat, though if you're really serious about lowering the acidity of a white wine you'll usually undertake a more aggressive process than MLF. MLF is more about creating a particular style (in whites, anyway). Hope that's helpful. Cheers! P.S.
