This video was filmed in the Glendale Heights, IL Showroom's live demo kitchen.
Here, the Chef demonstrates the power and speed of high heat cooking. Then, when finished, Wolf burners have the capability of being set to a very low temperature (simmer to melt) to just keep something warm without scorching.
The Wolf dual-stacked burner means there are literally 2 burners in every burner. If you were take the whole range/rangetop/cooking apart, you would see two gas lines and two ports going to every burner; one for high heat and one for low heat. This way you have complete control of the amount of heat transfer. Also, Wolf has a "true simmer" meaning that the small flame stays on, does not flicker, and does not click-click-click on/off every few seconds. This gentle flame comes from that bottom stacked, low burner which is found on every burner.
The chef made sauteed broccolini, mexican street corn, charred scallion chimichurri, with a turnip and parsnip puree. This was also topped with Slow Roasted Beef Tenderloin from the Wolf Convection Steam Oven (see this video for that: • Wolf® Convection Steam... )

I see the broccolini and corn are in sauté pans. Is there any reason they couldn’t have been done on the griddle? Just easier to plate/remove?

Yes, absolutely they could have been done on the griddle. In this quick demonstration, the chef was showcasing the Wolf Dual-Stacked gas burners - high heat to very low heat (keeping something warm without scorching). Thanks for watching! Hope this helps.
