In this restoration video, I restore a beautiful vegetable slicer from the early 1900s.
More about the restoration process:
When I saw this piece for sale, I knew from the start that it would be the subject of an exciting restoration video. The restoration process went well without problems, but it was interesting mainly because I used some new machinery.
I cleaned the wood and the rust with a 2000-watt laser. It was satisfactory, and everything went faster than with the traditional sandblaster. If you want to learn more about this machine: www.sfxlyxc.com/?aff=2198
I also decided to give this vegetable slicer more personality by using a CNC engraver for the first time. It took a while to get the hang of it, but the result was very satisfying, and I cannot wait to engrave/carve something at a bigger scale.

I also wanted to keep a vintage vibe, and I succeeded. I didn't want to insist too much on the wood and preferred to keep the scars of the past. The blade was sanded with progression grit from 100 to 2500! Even so, tiny traces of rust pitting remained, but it didn't bother me; it looked brilliant and did the job of slicing the cabbage.
Although it looks like a rather primitive antique piece, it is made up of many parts, and one was missing, although that slot was never used; for the design, I decided to make a new piece out of aluminum.
All the metal parts were nickel plated and then painted olive green.
I worked on this cabbage slicer for two weeks with much love and patience, and I'm thrilled with how it turned out. It works great and will be very useful in my kitchen!

More about Mandolin Vegetable/Cabbage Slicers:
This antique slicer is known as a kraut (cabbage) cutter, although, besides cabbage, it could be used for a variety of foods, such as turnips, carrots, and beets, to name a few. Homemade sauerkraut (pickled cabbage) is a way to preserve cabbage by layering and pounding thinly sliced cabbage and salt in a crock or other suitable container. It is then left in a cool place to marinate or pickle in its juices.
Before kraut cutters were invented, cabbage was cut by hand with a knife. Early cutters were quite roughly made. Most were wooden boxes with a slot cut out of the bottom to which a scythe blade was attached so that it was slightly higher than the bottom. Cabbage cutters later became more refined. Some even had two and three blades. Other improvements made were holders to keep your hands away from the blade as you ran the cabbage over the blades.
Records show that cabbage cutters and the making of sauerkraut came to America as early as 1848 when people from Germany and Central Europe immigrated. Some people still make homemade kraut today.

Most modern mandoline slicers have a sliding hand guard to hold the food item and protect the fingers! ~ he could have made a matching guard with wood and food-safe stain on it 😉

I'm glad to hear that about food safe products. I understand a lot of the time many objects are "restored" just for looks and won't actually be used with food. However, in my opinion, to "restore" something is to return it to being capable of full use, even if it is going to be set on a shelf to be looked at.

Excellent resto! When I first saw the thumbnail, I said "that's a kraut cutter!" My grandmother used a similar one, which my dad has somewhere. I remember when we made sauerkraut one summer--lots and lots of cabbage shredded and packed in crocks. I know people are saying it could be used for other vegetables, not just cabbage. Of course it can but what it mostly was used for was cabbage.

Excellent restoration, Rusty! Fascinating to watch you restoring things. I've never heard of or seen a cabbage slicer before; I usually shred mine with a ruddy great kitchen knife; lol. Think I kinda like my way best, but it's a pleasure to see old things restored.

I was thinking that zinc on the blade would resist future pitting. And you MUST operate it with a pusher: I have sutured up two peoples fingers and palms from these devices. They certainly do cut well, and don’t care if it’s vegetables or flesh. Nice tool!

@@rustyshadesrestoration I have used a stainless mesh glove while butchering things, and it certainly prevents the inevitable nicks one gets, and improves grip as well. I found that soaking it in detergent and a mild acid followed by agitation cleans it well. Should work fine to keep fingertips in place with these devices.

Beautiful restoration, as always! I question whether this is strictly a cabbage cutter; it operates exactly like a mandoline, which is used to slice all kinds of vegetables and would have been more useful in a 1900s kitchen than a single purpose tool. My only quibble would be not to use a dark stain on this because a light stain, or better yet, a lime wash would show food particles a bit more clearly and you'd want to keep this clean, like any other kitchen tool. Better make yourself a pusher to use on the vegetables, too, or you might find yourself without fingerprints someday!

The laser was very, very cool! The whole project turned out gorgeous, as usual! I love watching your channel ...I did curl into a small ball and only watch through my fingers when you started to really put some muscle into slicing the cabbage - that was terrifying. Mandolins are notorious for their thirst for blood, and fingers

Lovely restoration! But seriously consider wearing a "cut proof glove" when using it, if you aren't going to craft some type of hand guard. Those are FAR cheaper than stitches, and the pain of finger injuries. Ol' Vrghr always wears one when using the mandolin.

Thank you, Jamal. This project took me almost one week; some were faster, some longer. For example, the vintage scooter that I restored took me one entire month.

Beautifull restoration, i liked the engraving. Is wood stain food safe? You did not wax or oil the wood after staining?

Thank you. I'm glad you like the engraving. Soon I will do a bigger project with that CNC machine. The wood was oiled, and yes, I'm always using safe food products for kitchen gadgets because most of them will be used in my home, and I care about my health and other people's well-being. 🙂

I think you need some sort of tool to hold cabbage while slicing it, because sooner or later you gonna injure your fingers if you're not careful.

I have been extensively researching laser machines as an additional option to my sandblasting business. It was interesting to see you use a CW laser on wood. It was my understanding that wood required the use of a pulse laser to prevent burning. Is it the same technique as sandblasting in that I have to keep moving or I will blast a hole in the surface? Keep the laser moving and it won't burn the wood? TIA

Hi! Yes, low power and frequency, plus moving faster. That's the secret, but nobody can guarantee you won't mess it up. I always have a test piece close to me.

If the settings are done well, the laser doesn't burn things at all. Should only hit the surface particles and dislocate them from the object.

I think it's great when I see old, broken things given a new life. Unfortunately, things are thrown away far too quickly because they are old and defective, although so many things can be repaired and restored, which is an incredible shame.

Looks like the wrong choice of laser is being used. A pulsed top hat beam would be more appropriate than a CW.
