Okay people, many are wondering why they don't wear gloves, here's why: 1. First of all there are historical reasons. The art of cheese making is very old and many cheese makers use recipes and techniques developed several hundred years ago and therefore many don't want to wear gloves as they didn't wear gloves a hundred years ago. This is admittedly not a good reason, but it's the reason many cheese makers would probably give you. 2. The curd is very hot and kills most of the different types of bacteria not specifically used for the cheese making process. 3. The gloves make it harder to really feel the texture and quality of the cheese, something that is very important when making cheese. 4. The most important reason: gloves do not work. There have recently been studies conducted in America looking into the usefullness of rubber gloves and the results show that when using gloves people are more carefree about where they put their hands and this means the food prepared with gloves is often covered in more bacteria than food prepared with washed hands only. Therefore the fact they aren't wearing gloves in many cases mean the end product is less contaminated. So yeah, there are many reasons not to wear any gloves and these are only some of them.

To those idiots that are asking why they don't wear gloves, it's because the mozzarella cheese substance in that state is so hot that the gloves would freaking burn through. Also, they won't be able to properly shape the mozzarella using gloves. Don't be so ignorant.

Yeah come tell them they're dirty because they don't use gloves but italian factories are some of the cleanest and with the most sanitary controls while you eat plastic cheese full of chemicals

All these workers stick their body parts in the cheese. Who knows where those hands were just before getting immersed in the cheese?
