This is a review of my Miyabi 5000 series knife. I believe this knife is the best production knife in the world.

There is one problem mate if you love knives you cant stop buyng :)) even if you know that you dont need it or you wont use it you are still going to buy it

Or, that there will be many home cooks buying Miyabi knives and to cut carrots and onions bought at Ralphs. :) There's a KZfaqr...Ryky from Burrfection...used a Miyabi Birchwood SG2 to prepare dog food. :)

i just bought/ordered one of these for $430 in canada. I have been buying my knives from the salvage center/second hand shops for my whole life. So im super excited for this to arrive in the mail!!!

I have the 9 inch Miyabi Gyuto 5000MCD and its the only Miyabi I have. I've had it for about three years now and can say its an upper class knife. My regular Henckels will get the job done, but not as good as this one.. edge retention, beauty, and balance there just cant compare. I know what your saying though about just one knife, like the old cliché beware of the man with only one gun the same applies to knives, however design is for function and I must say I would like to add a santoku of the same caliber to compliment specific tasks e.g. one for vegies and one for meat cutting task.

Yes, that is the Birchwood line. The Black line is even nicer. The Black line has 132 layers and a HRC rating of 66. They're stunning!

True, nobody needs a whole bunch of crappy knives but should spend a decent amount on one decent knife. My problem is that I need a whole bunch of decent knives....I don’t really need them but then again I really do...get my drift?? 😉

you need to oil the handle looks like it's drying out towards knife end at the edges. Something that has beeswax in it.

does it any rust like other damascuss knives? or is made differently to avoid rust and petina?

Oliver Maleny it's got different metal composition. Does not rust or patina. Having said that, I wash and dry it after every use. Not taking any chances

French River Springs Thank you! A couple of years ago I saw this set of knives; personalized wood handles, hand made with a damascus pattern that I thought looked nice, so I got them. They are very good, I really love them, but working at a fast paced environment makes it really hard to keep up with the extra care they need. I wanted to get this knife because I've heard great reviews but I wasn't sure if it was going to be the same, if you know what I mean.

fahad alhbag 8000 grit Japanese wetstone. I sharpen once a month

I agree with you. Shaving leg or arm hair is one thing but to shave a man facial hair, it needs to be so much sharper.

"World's best knife" is LITERALLY a matter of opinion bud.. Also, any intelligent person understands that EVERY tool has a time and place! 🤦‍♂️

that shouldnt be the only knife you own, other knives are needed. that chefs knife will chip if you use it break down a chicken or anything with bone. other recommended knives are a boning knife, paring knife, and bread knife(serrated edge), great for tomatoes too

Yeah got a bit carried away but still hate to see six knives on sale that are similar. I got a miyabi pairing knife too. I keep my knife so sharp that it cuts bread with ease. Cheers

i own the miyabi fusion 8 inch chefs knife. very sharp, though i imagine yours is just as good, if not better. though probably the main difference between mine and yours is what the knife is made of. i also own a mcusta zanmai 9.5 in. i got the miyabi bread knife off of ebay for $40(originally costs $120 at regular retail price)

Yeah it's very nice, my brother loves the sharpness. I have the German(not damascus) steel bread knife. My friends in culinary class always wanted to use it to cut bread for customers(the culinary arts programs has a restaurant run by students)
