You refer to the Gaggia as an upgrade. Yet you still use the delonghi. This gets me confused. Do you really think of the gaggia as a much superior machine? If so why you're keep using the Dedica? I'm confused 😕

@@NunoLeitaonunogrl Good question, Nuno. I have numerous machines, and I like to experiment with them. The Dedica will always stay in the arsenal, because it is the perfect travel machine, and it also heats up super quickly in the morning. I get really dry pucks from it, that plop out with ease. It is fun to use, and never gives me any problems. But, the Gaggia makes superior espresso with the right preparation, and certainly superior milk foam. I can never get microfoam as creamy with the Dedica, as I can with the Gaggia. Thanks for the question!

@@aygulalp3806 Hey Aygül! Well the Gaggia has more potential, but I like the simplicity of the Dedica. And I am not a coffee snob either, because I do not have such a refined palate. I like espresso from both.

I just bought a classic pro, understanding that as a stand alone, consumer oriented device it probably isn't the best value. My intent though, is to be able to really learn how to make great coffee, on my own, and to be able to fiddle with the machine. With this in mind, my sense was that the classic was the direction I needed to go. Cheers.

Hi Tom, thank you for the review! There are two more "pros" points I really like about Dedica: (1) pre-infusion and (2) quick steam production (first, it takes just a few seconds for thermoblock to get ready for steam, second, technically I can froth milk for as many cups as I want without the machine needing to switch to boiling steam; I think those who like milk-drinks might appreciate Dedica more).

Well said, Yevgen! I wish more machines had pre-infusion. Even my much more expensive La Spaziale doesn't have it. Steaming is quite nice on this too, but you do have to purge the thermoblock after steaming before extracting espresso again. Cheers!

My mother had that gaggia for several years but the bottom rusted on hers. I don’t know how but I found and bought the dedica at goodwill for $2.99 last year. It was stuck on Descale when I plugged it in at the store, I think the previous owner thought it was broke?? I spent $16.50 on a used portafilter w/ a double shot pressure basket. I basically got the machine for free. Love it! 🤣😇👍

Oh my gosh, that’s amazing! What a deal! Believe it or not, I also found an EC 685 at Goodwill for only $6.99. It came with all the parts and was fully functional. You can just imagine how gleeful I was. 🤗

I got a dedica for my daughter as a wedding gift in 2017, I read a little about t and got one for myself, my daughters hubby is a coffee nerd, great guy, just really technical, both machines are still going strong, I use mine everyday where he switches off between the dedica and a aero press, I need to upgrade my steamer wand, then it will be perfect

The best upgrade for a Dedica is probably a replacement however I’ve upgraded from a cheap basket to an ’IMS Precision 16-18g Filter Basket compatible with Delonghi La Specialista, DL2TH26E’ not too cheap but to be fair it’s transformed the output quality.

With the Dedica steam wand try using it with the cappuccino setting for 20 sec and then move the setting to hot milk for the rest of the heating cycle. Much better result.

Sorry but these are incomparable machines… 170 € Vs 600 €. The quality of the hidden parts is quite different. A Gaggia Classic works for 20 years if well maintained 😉

I totally agree with this video. I bought a Gaggia Classic to replace the Delonghi Dedica, but the next day I decided to keep the Dedica (modified). The most annoying thing about the Gaggia is that it cannot steam milk properly due to the small boiler and poor steam temperature control.

Haha yes, the boiler takes some fiddling. If you time it just right, it has enough power, but it takes some practice.

@@TomsCoffeeCorner if I understand well, the milk foaming must start when the boiler is heating up, and not when it is fully heated. And, I have to start foaming at the right time, not too soon and not too late... That's what I'm saying, boiler does not have temperature regulation. It only has something like a bimetallic thermal fuse with a big hysteresis. Our grandfathers used something like that. I like to play with espresso preparation (grinding, extraction, latte art) but I don't want to become a slave to (bad) cofee machine. :)

Hard disagree, I have both machines. And the Gaggia steams just fine, especially with the Rancilio Steam wand mod.

Thank you, I've had a Dedica for 2 years now and looking to upgrade since after sometime i was dissatisfied with the coffee taste, I even purchased a bottomless portafilter for the dedica but even with a good grinder it was hard to pull good shots especially since the temperature in the Dedica wasn't that great IMO. I've been looking for an upgrade but I'm unsure at the moment, I've thought a lot about Gaggia Classic Pro however the fact that many people suggests mods makes me think that alone by itself isn't that great so right now i find myself incapable of choosing

I recently bought a gaggia classic and I can say that even without mods its a very good machine, OPV mod is really the only important one and it only takes like 3 min. to do. all the other mods that people are saying to do are really only quality of life improvements as it makes great espresso in its stock configuration. If you do get the Gaggia you will have to tempurature surf which can be a little tedious but there are plenty of videos on youtube that explain how to do it and its not that bad once you get used to it. In my opinion the gaggia is a really impressive machine that if you do decide to mod can compete with many higher end espresso machines in regard to espresso quality.

I want to make an observation, I hope you see my comment. According to the National Institute of Italian Espresso, the ideal pressure to get a good coffee is 9 bars (because of perfect extraction of the oil and etc.), not 15 bars. What these machines do is to get 15 bars at the pump so when the hot water reaches the grounded coffee it is at 9 bars. At least that's what they try to do. Home machines work this way because their pumps are small relative to industrial coffee machines. Strictly speaking the De'Longhi Dedica machine comes marginally closer to the correct espresso extraction pressure. Thank you for the video!

Hey Seba, you are right that the 15 bar pumps do not come close to that at the group head. I measured the Dedica at 11 bar with a blind disc, and the Gaggia at 12.5 with a blind disc. So that is their max pressure. But during the extractions, you can achieve 9 bar with either machine, based on your grind and puck preparation. Cheers!

Hey Tom. I never saw before the temp graph for the Dedica, well done!! So probably is good to run 1 or 2 shoots with water only before doing the espresso, that way the temp stability should improve.

I think so, yes. Also, use a bottomless portafilter, so that the aluminum and plastic of the original don't cool down the espresso. Cheers!

@@TomsCoffeeCorner yeah that would help however the group head is cold as you showed. Run an empty shot would increase all system temperature. I have another hack to increase temp (for light / medium roast extraction) however have not measure it in the puck, but thats another discusion topic… 😉

@@TomsCoffeeCorner I am testing two hacks to increase the temp. One of them seems to damage quite often the puck so extraction is not consistent. Will let you know about the other one when finish some taste tests

@Tom's Coffee Corner I bought the Dedica. Took it out of the box and immediately put it back in the box and back to the shop. I’m sure it has its points but it doesn’t feel much different from a bargain machine. The Gaggia on the other hand feels like a little pro machine. I don’t think you can do better at this price range.

Good review. About temperature on Dedica - according to some reviews you need to pass hot water through machine before making coffee to keep it worm. So this is not so terrible.

Partner acceptance factor is a huge point. Its why I'm still on the Dedica. The only machine which has the convenience of the Dedica but great temp stability is the Ascaso Steel Duo PID.

By partner acceptance I assume you mean your partner at home. I have the same problem would dearly love to upgrade to another machine possibly a Classic pro but my missus likes the dedica because it looks nice and she is a pretty determined person.

Yes, the Ascaso is a nice looking machine, too, and made in Spain. It does cost a pretty penny, though.

Tom re the temp tests - I never draw from my Dedica without first running an empty shot thru the portafilter (usually a double shot) to get the head up to temp. Would be interesting to see the temp test results on a draw from the DD after it's metal has been pre-heated. Also do you recommend setting the DD's programmable temp to 'high'?

Hi Greg! Well, I do not think preheating that metal will make much difference, since I do the tests with a bottomless portafilter. So, the water just comes into contact with the coffee and basket. For these tests, the machine was already up to temp. Cheers! PS - yes, I set my Dedica to high.

@@TomsCoffeeCorner Hi Tom, thanks for the video, even after a year. I have a dedica since the beginnng of the espresso journey. I use the temperature surfing profile from "Kaffeemacher". Set Temp to Medium, one full double shot throught the portafilter, and then 2 pre infusion startups/interrupts before starting preparing the puck. Works pretty well for me.

Hallo Tom, thanks for this useful video, it would also be interesting to know, how both devices perform over electricity usage. I guess the difference would be huge, thinking Gaggia needs to warm up around 5-10 minutes before it's brew-ready. Am I wrong? Thanks and keep up the good work!

Hi Ziya! I am guessing the Dedica is better on electricity, since it has a thermoblock and heats on demand. The GCP heats up every time the thermostat triggers.

Thanks so much for this! I have a Dedica 685 for over a year now and have been researching on what to upgrade unto. It's a toss-up between a Delonghi La Specialista Arte or a Gaggia Classic Pro. On the Arte, I love the convenience of having an all-in one machine that's automated. If I get the Gaggia I would have to spend more by having to get a good grinder. The reviews on the Gaggia are very good everywhere - build quality and coffee quality. Could you make a comparison video on the Gaggia Pro vs Delonghi La Specialista Arte?

Hello Vincent! Thank you for the video idea. I would say it’s a somewhat unfair comparison however, because you need a good grinder to work with the Gaggia. So that’s set up will cost somewhere around $800-$1000. In that case, espresso will be better on the Gaggia. What I could do maybe is, compare the economics of both set ups. I do prefer the built-in grinder, for less mess. Best, Tom

@@TomsCoffeeCorner Yes, a small bowl with hot water, to pre-heat the portafilter. Before use, I dry the portafilter quicky with a cloth, put the coffee in, and make the shot...

@@Ot-ie5bv My heater for the portafilter is a simple little steel knockbox, filled with hot water (just enough to put the metal parts under water). You can put your portafilter in for pre-heating.

I have a dedica and it’s starting to die on me in less than a year. I got a bottomless portafilter with an espresso hand grinder and was enjoying the coffee. However it has started to explode with pressure and water bursts out of it as I pull a shot. Will be getting the Gaggia now

Yeah, you ruined the gcp for me. 😀 I wanted one. Bought a scratch and dent Stilosa. Plan was to mod the 90.00 machine while the GCP was under warranty. Then that heated group and robust boiler system. Steam wand infuse and ramp down. Take it to steam and turn the brew pump on to air fry a blonde or cinnamon roast. Then I put a dimmer switch in series with the pump near the switch. So getting another " used good" stilosa, some parts and tools. Love your content. Thank you for bringing some international diy skills to the land of the enormous consumers.

@@TomsCoffeeCorner Sure. Put a whole 90 seconds into this. 😀 The switch was recommended by a forum member. Rated at 200 watts seemed low so I duct taped it outside before installing in the aircaft. 😂 Looked pretty straightforward. Used to ride the Nimitz and work on airplane electronics. @@TomsCoffeeCorner finally remembered to record this. So far only tried it on 7 grams of blonde robusta dropped right as the first crack faded. Using the single basket with the pressure hole punched out. Long pre infuse and 8-10 second flow, shutting off at 21grams. Ran out to 25. Plastic out of portafilter. Drinkable but not amazing.

After a couple of months use of the Dedica, finding it hard to find a solid excuse to upgrade. With open basket, puck screen, fresh beans pulling consistenly good shots. Did however spend more on grinder than machine with purchase of Baratza Encore ESP. Been pouring some water though machine pre shot to assist in preheating portafilter and head, not sure if this helps all that much.

Pre-heating is always good. Dunk the PF with basket in a cup of hot water to really pre-heat thoroughly, for a better shot. Cheers!

Thanks great video! Godsent cos I am planning to upgrade from my DeLonghi. Which do you recommend next? Gaggia Classic Pro? Curious to know about about the quality of espresso shots. My DeLonghi has been great but the espresso shots aren’t anything like the one I have at a local cafe.

Did you make shot comparison with the standard 12 bar blind filter pressure and 9 bar, with the Gaggia? Don't be surprised if you get better shots and better acidity with light and medium roasts, with 12 bar

Hi Tom, as you know I have both machines now although my gaggia is the 2010 model, the Dedica with its mods inc a shortened pov spring seems to work ok but I’m finding I have to regularly alter grind settings if I change coffee beans because with the slower extraction the puck gets very wet and sometimes sticks to the shower screen, at least it supplies me with a decent coffee whilst I rebuild the Gaggia, great video as usual! Andrew

I actually get the best pucks with the Dedica. They normally plop out all by themselves. But I think that is mostly a function of the coating on the basket, and how tight the tamper fits, compacting the puck. Good luck overhauling that sweet 2010 Gaggia!

Use a smaller volume say 16 grams in for the Dedica with a puck screen. Getting great shots on the Dedica after a few weeks of practice. Puck screen is a life saver for keeping head clean.

@@laowai2000 my ims basket for Dedica is 14g so only use 14g, I’ve tried a puk screen and it just chokes it all up, I’m getting better extraction now with my new hand grinder, the only problem is the sweet spot is between 2 settings! so either it’s slightly to fast or slightly too slow even with different tamp pressures

@@dingnextstop yeah ain’t easy seems the grinder makes all the difference. Used to struggle with same issues, shots that did not pour or pour way too fast. With Baratza Esp grinder, game changer. Not getting those un-pourable shots even on finest settings.

Thank you for this video! I purchased the Delonghi EC680 second hand because i live in a small apartment and size is a huge factor. Maybe youve made a video on this, but how can i stop the unpressurized portafilter from shooting small streams of espresso on my counter during extraction? Well, it has mainly to do with puck preparation, and using fresh beans. That will reduce the spurting quite a bit. But even with the best prep, you will still get some spritzers now and again. Espresso is a dirty little hobby. 😉

I have the EC685 and I found that if I used freshly ground beans at a slightly finer grind than recommended and tamp it a bit harder it will remove most of the small streams, but it will make a stronger coffee. I usually aim for 1:4 with 13.5g of coffee with the pressurized basket, but for the unpressurised, I use 1:3 with a 14g basket.

Hey Eugen, I measured the factory setting of the Dedica at 11 bar, and the Gaggia at 12.5 bar maximums. These are the pressures attained essentially with a blind disc. During a coffee extraction these will be lower. Cheers!

Hey Tom. I think I have decide on the Dedica Arte with your recommended upgrades. Was watching this video because I was considering the Gaggia EVO Classic Pro and I just wanted to understand some baseline differences. I know in many ways it's the better machine, but the size and look and ease of use of the Dedica wins out, I think. Plus, the new Gaggia EVO is $650 here in Canada and the Dedica Arte just went on sale for $300. My questions are: What is the downside to not having a 3 way selenoid valve other than having to wait a bit after pulling a shot? Will my pucks end up being a soupy mess? And, would the use of a 51mm screen help? Thanks - cheers!

I prefer not having a 3 way solenoid, because the pucks knock out cleaner for me, and also then you don't have to worry about backflushing the machine. I wouldn't bother with a puck screen either. Cheers!

I think the biggest problem with the EC685 is the temperature. It is neither above the recommended 93 degrees nor contant during the extraction. Would love to see a mod for that problem..

It's possible to rise the water temperature by activating the steam function for some amount of time and switch it off again before the steam button stops blinking. That way the thermoblock and the water inside it are getting hotter than the predefined temperature. However that can bring too much steamy water so can be counterproductive and over-extract the coffee if done too much time. The water in the tubes, which are going to the grouphead, is still cold so it should be pushed away trough the grouphead after that.

Was thinking the same, whether temperature surfing is possible with the Dedica (by activating the steam function, then deactivating before it locks in, so a shot can be pulled with higher temperature). My Dedica needs 7-8 flashes to lock in for the steam mode. Would be awesome to see a test confirming this method to raise temperature and to check how much the temp rises e.g. after 6 flashes. Tom, awesome video, as always. Loved the PAF concept😂

I've had my EC680R a few years now (since April 2020) and I've been considering what the next step up would be. The GCP has always seemed like it could be a decent step up, but after watching this comparison, I'm not sure it's worth the bother really-it just presents a different set of annoyances to overcome. Do you have any opinion on what the actual step up would be from here that isn't horribly expensive? Maybe the Rancilio Silvia?

Probably a MiiCoffee Apex. Or if you want to step up to a dual boiler, then the Breville Dual Boiler. The Apex is nice though, because you keep the heat circuits separated. That's quite a big advantage over either the GCP or the Silvia.

Well, the steam out of the Rancilio is a little finer, and the wand is much deeper, so that it fits properly into a milk pitcher. I am most curious to see how the wand is on the EC885.

Hey, thanks for the nice video! I do have question: My dedica does seems to have too much pressure on the frother. It's very loud, there does seem to come out way too much steam and the milk starts to even cook eventually. What could be broken? The espresso function seems to be okay. Thanks in advance! @@TomsCoffeeCorner I tested it an the temperature bild up seems to work just fine. However, the frothing is very loud with kind of a screaming noise and no foam builds up. There is a good amount of steam coming out, so that it looks functional. I did already change the OPV as well as the steam vault, but the problem remains. Any ideas?

I'd say it's an upgrade if you consider the PID in the BBE, and the fact that after a while the brew group is heated, leading to more temp stable shots.

Stainless steel is not necessarily magnetic. And also, the painted parts of Dedica are probably not STAINLESS steel.

@@TomsCoffeeCorner Stainless steel is an alloy, and some types are not magnetic due to the effect of other metals in it (e.g. type 304, one of the most common ones). Also, stainless steel is not a good base for applying paint, that's why the painted parts on Dedica are probably some other type of steel.

Yes, 304 quality is stinless steel and non magnetic. So gaggia is probably 430 quality and more vulnerable in terms of stain..

The DeLonghi isn't a stainless steel constructions. It's plastic with only the outer shell being made of sheet metal. Purely for cosmetics, exactly like on the Breville machines. I kinda disagree on the Gaggia drip tray. It does lock in on the bottom and it's pretty large. I recently upgraded to the Classic from a Barista Express and while I miss some electronic features I like the analog nature of it.

I like the manual nature of the Gaggia, too. And it's whole body is made of stainless. But the Dedica is also made of stainless, at least the shell is. That is more stainless than the new Specialista Arte model, which costs more...

The Gaggia can pull shots one after the other, because it has a 3 way solenoid valve to release the puck pressure. For the Dedica, you have to wait about 60 seconds. They can both do a bunch of shots per day, I am sure. We normally do 6.

help me out with an idea please when choosing between these 2: i can either buy the dedica new, or the gaggia second hand(2 years old) just with 20% extra cash the only drawbacks that bother me on the gaggia is the height of the cup it can fit which bothers me so much on my current espressor, that i want to change it :). also the sheer size of the whole machine and visual design. everything else is basically a plus in my eyes

Hmm, this really comes down to ergonomics vs flavor for me. The Dedica has much better ergonomics for me, but the GCP can deliver better espresso. But with a few mods like a bottomless PF and good basket, along with a little temp surfing, the Dedica can deliver pretty decent espresso, too. The GCP is messier, harder to knock out pucks, has less space under the brew group, and a hard to see into water tank. The Dedica is better in all these regards. But of course it's a thermoblock vs boiler argument too. You will have to just decide on your own. Cheers!

Should never keep the original Portafilter to the machine you buy. Better to upgrade your Portafilter to the ideal specs for it, get an IMS basket for better extraction

Great video! Can confirm a lot of these points as I've had the Dedica EC685M, and returned it for a 2012 Gaggia Classic. Overall, the Dedica was a great smaller machine, but as a tinkerer, the modability of the Gaggia Classic's (Especially the older ones) was a huge draw for me. Excited to see more videos!

Well, they need time to recover between shots since the boiler is so small, but the shots can be excellent with good coffee beans, grinder and puck prep. Gastro machines can make one after another, due to their boiler size, and being constantly switched on (at temperature).

Man, seeing the temp chart for the delonghi really killed my desire to buy a used delonghi just to mod and experiment with it. At the high beginning temp you're barely extracting dark roasted coffee properly.

Can't justify replacing a working De Longhi with a Gaggia? No worries. Just wait a few months until the on-off switch fails on the De Longhi. It happened to us three times. Yes, three. Fair play to Amazon though, they refunded two out of the three machines, even though we'd had the last one almost a year.

Well, the Gaggia is pretty sweet and has industrial switches. But I have had no problems with my Dedica in 5 years. It could just be that the switch lost its position in the housing. Anyway, glad you're happy with the GCP!

I would say it has much more potential, yes. But the GCP can be inconsistent as well. You have to get to know the machine. I'd say they both serve their price segments admirably.

Would be interested how the Gaggia Viva Chic performs compared to the DeLonghi and the Gaggia Classic Pro....except Steam for Milk.

Well, the Viva Chic has a cheap pressurized basket, so I wouldn't be too hopeful. I think the Dedica is the best cheap machine, and the Gaggia is the next best step up.

@@TomsCoffeeCorner the Dedica has also a pressurized basket/portafilter. Has the Viva Chic the same issue like the Dedica basket/portafilter with old Coffee particles aside/behind the rubberized lid? I think the Viva Chic has also a Gaggia 58mm basket/portafilter brew-unit Like the Grangaggia or the Classic Pro. So you can Upgrade the Viva Chic Like a Dedica (a Gaggia Classic Pro) with single bottom basket or a Open basket. Both non-pressurized baskets/portafilters.

@@espacesX I would have to look into that, to see if the PF can simply be swapped out. If so, that would be cool. The reason I always recommend the Dedica is because of the wide availability of modded parts around the world. Can you find an aftermarket bottomless PF for the Viva?

@@TomsCoffeeCorner there are following unmodded, well-made 3rd party basket Holders / porta Filters available for the Gaggias with 53mm portafilters Like the Gaggia Viva and the Gaggia GranGaggia - 14g bottomless - 7g bottomless and - 14g with 2 outlet Ports Compared to the Gaggia Viva the Dedica generates random Results even with the pressurized portafilter. What can we expect from a Thermoblock Concept? Just lower Energy consumption. The Gaggia Viva has a 60ml Aluminium Boiler If I remember right. The Gaggia Classic Pro before MY 2016 (Calenderyear 2015) has a 80ml Boiler Out of aluminum. It's Just the Steam Performance where the Gaggia Viva is Not a good Performer. Finally what can we expect from Pre-Infusion at the portafilter Machines? The coffee won't Bloom (/Release plenty of CO2). To activate Aroma professional.machines make a Steam Shot before makimg the Shot with hot water.. At Pre-Infusion for real Blooming the friendly smiling Melitta AromaBoy is a real Performer. Even the Ratio Eight and Ratio Six do Imitate the Melitta AromaBoy at Pre-Infusion / Blooming. It's Not really that visible in the temp.&flow-curve as you would Imagine. The Ratio Six and Ratio Eight make the best Coffee Like the Melitta AromaBoy does... No surprise except for the Main-Stream and the communities. I think.the Gaggia Viva Chic (Not the older Viva Style / Viva Style Chic) with non-pressurized portafilters is a very good Performer as the Boiler has higher Integration. Focuse on the Espresso Quality. For Sure the Gaggia Classic Pro will Last longer (build Quality).

is there any difference in quality of shot between ec685 vs ec260, ecp35.31/3420?

ECP 35.31 is the same machine as the ECP 3420. They are both better than the EC685 in my opinion, and the EC260 is somewhere in between. Cheers!

Dedica and classic it's diff class of machines and nobody should to compare them. Flowmeter doesen't mean empty sensor, like some other machines which have magnete bobber and reed switch.

You are right, they are different classes. This video is aimed at people looking to upgrade, or trying to decide whether to spend extra on the Gaggia as a starter machine over the Dedica.

No comparison. I came from the EC685 and got the Classic Pro. I am extracting excellent flavors from my beans. The EC685 just isn’t close enough.

Yes, the Gaggia does do better with extractions. But it costs 3x more, so that is a deciding factor for many. Cheers! Tom

Don't think that laser temp meter is precise. It gave me various readings depending on the surface. Reflective surfaces especially were not precise

Seems you can't have any of these machines just be good out of the box you always have to mod or do something to them to get them to work right.

What's the best machine to buy with the simplest mod like changing the basket? I'm sorry to buy one. I'm just so stuck on which ones to buy because of all the modding that everyone seems to be doing. I like that gaja classic pro but how hard is it to actually do the mods?

@@Vyraxium I would go for the Gaggia Classic Pro. You don't need to mod it. It makes real nice espresso and steams well out of the box. But, if you want to do any mod, the 9 bar mod is extremely simple. I have a video on it too. But, you don't need to do it. Hope you enjoy your choice! Tom

@@TomsCoffeeCorner no the EC695, I dont even know the difference with the EC685 but with the neouza the machine was spitting water and coffee everywhere. But I found a trick, you just have to unscrew the black part of the dedica portfilter and you can fit the neouza's filter perfectly

Well, there are several types of stainless steel, and many different grades. Apparently it has to do with the amount of chromium in the mixture.

High quality stainless steel is non magnetic 304 and 316 grade...its the cheap lower grade stainless steel this is magnetic
