西蘭花蝦仁
材料:
急凍蝦仁180克
西蘭花1個
處理:
1. 急凍蝦仁,清水解凍。
2. 西蘭花,切細舊,清水加入少量粗鹽,浸2分鐘,擎乾水。
3. 蝦仁已解凍,清水沖乾淨,擎乾水,廚紙索乾。
4. 蝦仁,加入調味:
a. 胡椒粉少許
b. 生粉少許
c. 鮑魚汁/雞粉半茶匙
d. 油少許
撈勻。
烹調:
1. 大火煲滾1鑊水。
2. 加入少許鹽及少量油。
3. 放西蘭花灼3分鐘,擎乾水。
4. 大火在鑊中燒熱油1湯匙。
5. 煎蝦仁至金黃色,炒勻至熟透。
6. 放西蘭花回鑊。
7. 加入鮑魚汁1茶匙,炒勻。
8. 完成,上碟,可享用。

Ingredients:
Frozen shrimps 180g
Broccoli 1 No.
Preparation:
1. Frozen shrimps, defrost with tap water.
2. Broccoli, cut into small pieces. Put little cooking salt in tap water, soak for 2 minutes. Hang dry.

3. Put broccoli, soak for 3 minutes. Hang dry.
4. Heat up oil 1 tbsp at high flame in wok.
5. Fry the shrimps into golden yellow. Fry them well.
6. Put broccoli in wok.
7. Add abalone sauce 1 tsp, fry well.
8. Complete. Put on plate. Serve.
