The following is the recipe:
- 200g black glutinous rice (wash thoroughly and soak overnight; wash till the water is clear)
* soak for at least 5 - 6 hours; best if overnight in 200 mL water
- Cook with 5 cups of water (1L),
* This does not include 200mL water used to soak the glutinous rice.
Cooking:
- On high heat, let it boil vigorously for at least 10 minutes (30 mins from start switch on the fire), turn to low heat to simmer for 35 - 45 mins
* Do not stir or open the lid nor add water.
After 45 minutes, you may open the lid to check and stir; by this period it should already well well-cooked.

My mum used the mandarin orange skin which was dried under the sun. I like the flavour it adds

U can dry it and save it to be used anytime throughout the years. The dried one will have a slightly different flavour. I learned this from my Godmother who is Nyonya background...adding this will balance the coconut milk's creamy taste...so it will not too lemak and also more fragrance.

But don't use orange or any citrus fruits that have thick skin (thick whitish inner part), hard to get it clean and will have bitterness taste. Mandarine oranges is the ideal because their skin is thin
