Bulla is a processed starch or dough made from enset (Enset ventricosum), commonly known as the “false banana.” However, it is the root of enset that is consumed, not its fruit. This species is native to Ethiopia, and can be found in varying altitudes, soils and climates. Bulla has higher energy (8.5 MJ/kg) than Kocho (6.5 MJ/kg). Both Kocho and Bulla are rich sources of carbohydrates.
