In this episode, we're back at Los Buzos Resort in Panama after the country opened up post-quarantine, and our first group of clients are arriving tomorrow. We like to feed our guests fresh fish when they arrive, so the guides are doing a little grocery shopping out in the Pacific for yellowfin tuna, sierra mackerel, snapper and more.
Then, back at the lodge, we're running you through the ultimate fish dip recipe and tuna salad using fish that was swimming that afternoon.

Sheesh, these videos should come with a warning. Half way through the cooking part I had to run to the kitchen and make Halibut tacos, Baja style battered with chopped green cabbage and hot pico de gallo, some cotija cheese on top. If I hadn't had some good Halibut in the freezer I would literally have died of envy.
