Fried rice is healthier than the rest especially when we do it like the owners of fried rice. We do not know how to eat rice at all. Watch Nigerian movie and actors. Everybody is obese there.

Exciting yes, when prepared well with lots of veggies, the veggies and oil help reduce the effect of the carbs in Fried Rice, it's the best of them all in terms of spikes in blood sugar levels.

Nelly yes that's the order. When it comes to reducing the effect of the carbs in rice, oil is good. White rice is bare and has the potential to cause the most spike in blood sugar. Jollof Rice is better because the oil and other ingredients are cooked with the rice hence these have been absorbed into the rice. Fried Rice is the best due to the oil and vegetables used in the preparation. 👍 These days when I have white rice for dinner, I wake up with stomach ache and I need to pee a lot during the night and I am not a night pee'er.

Thank you for-the insightful discussion. I am not sure about the benefits or order of eating the macronutrients and vegetables however, the recommendation is that your meals are balanced; 1/2 of your plate is variety of vegetables, 1/4 of the plate is carbohydrate source and the other 1/4 of the plate is protein source, plus serving of fruit at each meal. The vegetables contain fibre that slows down the rate of sugar release/absorption from the food, decreases the amount of fat absorbed, keeps you full longer, helps you remain regular and maintain good gut bacterial flora . Whole fruits are preferable to juices because they also have fiber. Portion control and balanced meal is the key word.

You probably made this comment before you finished the video. Watch the video in full and you will see that the crux is about this part of your comment "vegetables contain fibre that slows down the rate of sugar release/absorption from the food, decreases the amount of fat absorbed, keeps you full longer" not about what you said you are not sure about. In fact I repeated spikes in sugar levels, diabetes and weight gain, pointing to my head/brain so many times during the video it freaked me out while editing but I left a good number of them in there for emphasis. Like I said in my opening sentence, what we eat (a.k.a. balanced diet and totally avoiding toxic stuff) is important, that's well established so this video is not about that. On top of what we eat is the order we eat it so we don't make ourselves sick either now or on the long run which is what this video is about.

Research has shown that eating veggies first, then protein and fats and oil before carbs help check blood sugar spikes. They also help with satiety so you don't over eat

Longest time, Aunty Flo. Love the new cover of your video. It's interesting that you broached this topic with focus on Nigerian dishes. I saw a talk by French Scientist Jessie Inchauspé where she teaches something similar and in more detail. The first group(veggies go in half an hour before meal time, if I remember correctly) but this a routine for a week. And the remaining three weeks she gives another tip per week to control blood sugar reaching the brain. Generally, I don't eat swallow in the morning, and I'm not a lover of rice. So, I always eat rice/pasta with lots of vegetables. Helps A LOT with my bowel movement. Would love to see another episode about our local breakfasts too. 😊Gracias .

Hi Dorcas, how are you doing? That bowel movement is very VERY important because without the vegetables, the carbs will sit there and be flowing into the blood stream like a drain pipe. That's an interesting practice, I will look her up. But veggies one hour before the rest of the meal? Wouldn't the stomach be empty by the time the carbs land there? I'm just trying to imagine it. It's very important that we pay attention to what is happening to our bodies so we can fix that with a change of routine before it's too late. Lately, I found that boiled white rice gave me stomach ache. This happened for a while, i started paying attention and was able to pin it down to boiled white rice. So my only ways to eat rice now is one pot rice dishes with Fried Rice being the best due to the veggies and oil.

Thank you. ❤ Winter is good to my skin but I hate the cold! 😂🙈 Nne eh, I don't have the discipline to stick to a specific diet. I will fail one way or the other. Abstinence and these basic practices I can do. They are not that strict so I have room to fail once in a while without falling off a "wagon". It's my pleasure. :)

Diet kee. I do not do that. But I really eat balanced diet. You are right with veggie soup. Now, I eat oat swallow. Running away from yam as much as I can especially yam swallow. Well made oat swallow has the texture of yam swallow. Started eating it recently and its so good with okro. Sometimes, I let the stomach starve. In my moimoi, I put different types of protein. yes, an adult need more protein, veggie and fat more than carb. Our food is more carb. One of the indices used to measure a poor nation. No be me talk am o. Na book. And I do not joke with mushroom. I make noodles the chinese way and thats how I get the kids to eat loads of veggies. Anything i throw in, they will eat. Teacher Flo, thank you for the education. We need this

lol @ diet ke. For real, I don't have the energy and strict disipline that specific diets require. Thankfully we can set up our own healthy practices while eating everything. And I see you've got everything covered in your healthy eating journey. 🙌🙌🙌 Yes, oat fufu is good, I even have the recipe on my channel. But be careful with oat fufu. Oat is still high in carbs, its saving grace is the low GI because of the plenty fiber. But once you grind the oats into powder, the GI increased sharply putting it on about the same level as wheat flour. So moderation is seriously key when eating oat fufu. You may know this already but I need to mention it for other people reading the comments.

The world set their standards that dunking bread in milk is not socially acceptable but it's the healthier practice. 😂 Yes o, with our busy lives, we may not always be consistent with these practices as a lot of work goes to meal planning too. We just try as much as we can. :)))

Great segment sister Flo. Pls consider doing a segment on native grains and their endless health benefits - Grains such as Fonio, millet (in their various varieties), sorghum and even wild rice (aka, ofada rice) are nutritionally superior to corn, white rice, wheat flour etc etc. We have various indigenous African grains that are packed full of nutrients but unfortunately, too many of our people don't incorporate them into their diet due to lack of awareness and historical erasure. Please consider doing a segment on grains, pulses, legumes etc including fermented food & drinks. Organic food are far better than processed food and drinks and fortunately for Africans, African continent is blessed with abundant indigenous grains and superfoods (including moringa, baobab, cocoa etc). You're spoilt for choice.

It was pregnancy that made me start eating bread. Never used to like it. Now, I can literally feel the sugar spike when I eat it and but it's hard to stop completely. 😞

To me, I can only rank these meals depending on how they are made. Between jollof and fried. I can go with fried first, if it’s not made with too much oil. White rice is definitely the last.

This cabs are added to soup especially in igbo culture is bcus most homes had to feed upto 10 to 13 children so to make the soup go round, they add something to thicken the soup with the amount of water thst is added to make the soup plenty. It has become a receipe.

But back in the day when these recipes were formulated, people were mainly farmers so what to eat was not a problem. Those who live inland may have lacked meat and fish because they were neither fishermen nor hunters, but farm produce was in abundance. Igbos who live in riveriine areas have mostly fish and other seafood based recipes because they were mainly fishermen hence that influenced the recipes.

Yes, I even have a recipe for that on my channel. But remember that the only major advantage oats (whole or rolled oats) have over other carbs is its relatively low glycaemic index. But oats is still high in carbs and once you grind it into powder the GI rises sharply hence can be quickly absorbed. So we have to be careful with oats. It's not always better case in point when used for fufu and as a thickener.

Where did you run to Flo..1st here. I am not on a strict diet, but there are things I do not eat for my health and some in moderation. One thing I do is to eat our carb laden Naija soups on their own without a swallow. If I most eat swallow, it means that I have not had any carbs that day, or I just use oat meal to substitute. The size is as small as a fist ball. Rice should really be cut if possible to max once a week or start by reducing qty it spikes sugar so high.

Rice does spike sugar so high. We may not notice this when we are younger but later in life, it becomes very evident. These days I totally avoid boiled white rice because it gives me stomach ache and makes me pee a lot. Fried Rice is better for me because of the preparation process. Glad that you are eating a small size of oat fufu. Ground oats is a tricky one because though oat has a low GI, once ground into powder, the GI increases sharply and it's still high in carbs. But lots of people don't take this into account when eating a mountain of oat fufu. 😂 Moderation should still be practiced every step of the way.

Yes, it makes salads taste great. Mayonnaise is made with raw eggs and lots of oil, I mean plenty oil compared to the eggs. So unless you are on a diet or have a health condition that says to stay away from these two, you are good to go. In everything moderation is key.

Watching people dip bread in tea was always irritating to me because i don't like our Nigerian tea of hot chocolate and milk but i have learnt to endure the torture as my kids love hot chocolate and milk. I taught them to dip bread in their tea to help bowel movement

I prefer juicing my vegetables, I just feel like I may overcook. 😂😂And I can't eat it raw so I juice them celery, lettuce, parsley with cucumber

Me too, I wish everything can be converted to juice or smoothie so I don't have to chew but be careful with juicing. Juicing increases absorption of the the sugars, oxalates and everything the fruits and vegetables contain. Steaming/Blanching/Sauteeing reduced the effect of oxalates (which can give kidney stones) so cooking vegetables is not bad. Oxalates is one of the reasons I throw away the water from spinach.
