0:33 Can you get vitamin A from vegetables?
2:20 Good sources of vitamin A
Today I want to cover the fascinating benefits of vitamin A and how to get vitamin A in your diet. There are a lot of benefits of vitamin A not just for your immune system but for your vision as well. Vitamin A is also essential for your inner skin (like the inside of your sinuses, throat, lungs, and digestive system).
Many people think they can get the vitamin A they need by consuming vegetables. However, true vitamin A is called retinol. This is the active form of vitamin A. At best, you're only going to convert 3% of the precursor of vitamin A (b-carotene), which is in vegetables. On top of that, very few people can actually convert previtamin A to the active form of vitamin A.
Here's a look at what you would need to consume to get about 9,000 mcg of the active form of vitamin A (retinol):
• Beef liver - 3 oz.
• Cooked carrots - 4.4 pounds
• Raw carrots - 40 pounds
• Cooked kale - 50 cups
• Raw kale - 454 cups
Good sources of vitamin A (retinol):
• Cod liver oil
• Grass-fed liver
• Raw milk cheese (preferably sheep cheese)
• Grass-fed butter

I had the same! My retinol bloodtest (6 year vegan) was rrreaalyy high. Nearly on the max line. even had a intracellular blood test which is a bit more accurate than plasma. I always have some bottled carrot juice from the store in the fridge if I have days where I eat less beta c. veg. Just take a few sips. But it seems like the overall i take is already enough because my bloodwork was really high. Dont base your health decisions on exceptions! Not everybody is the exception. And even if you have the gene just eat a bit more carrots/sweet potato/pumpkin. Watch the youtube video from Mic the vegan about this topic

The advantage of plant beta carotene is that the body only converts as much as it needs. Excess vitamin A is toxic. Toxic vitamin A levels can occur if you consume too many supplements or large portions of animal food sources. Besides, our body fat stores Retinol for a longer period compared to many other Vitamins. Hence, beta carotene is the 'safer' precauser. Of course if you are having severe deficiencies, advice given in this video will be useful.

This is not true. Daily recommended intake of Vitamin A is around 1000micrograms per day. The conversation from beta carotine to retinol is way bigger than 3%. Just cooking carrots and eating them with a fat source increases the conversation to 40%. That means healthy humans can get enough vitamin A from just 100g of sweet potato. People with the genetic disposition Eric Berg mentioned have to consume around 190g per day to meet the recommended value.

I just want to put a caveat out there. I have been detoxing from hypervitaminosis A for a few years now. Years ago I did take fish oil and also ate salmon or sardines daily which are high in vitamin A. I also took a multivitamin that contained vitamin A. I quit these after having a visual aura which is considered to be a type of migraine, although I experienced no pain. After another year I continued to have various symptoms that kept getting worse, including: bone pain in thighs and back, headaches that would last weeks (sounds crazy, I know 24x7), waking up with an inability to go back to sleep, ringing in the ears, sudden onset of sleepiness while driving that would often come over me within 5-10 minutes. After these symptoms and more continued to gradually worsen over a year, I realized I still had large amounts of vitamin A in my diet, in the form of 4 eggs a day and heavy cream in my 3-4 cups of coffee. I quit these and then began to have incredible pain in my liver and bloating of my stomach. Then more headaches, cramping and multiple other pains. Most doctors will not know how to deal with this. If you've taken too much vitamin A over the years, it can be deadly. The scariest case I saw on PubMed other than death, was a guy who needed a liver transplant after 4 months of symptoms getting worse after discontinuing vitamin A. His doctors had no solution other than discontinuing vitamin A, until he deteriorated to the point of needing a liver transplant. They published the results as a recommended course of action. You can find it on PubMed. However, I did find the only known way to counter the toxic effects of hypervitaminosis A, and that is with vitamin D. The doctors for the case above, obviously did not know this so proceeded with a liver transplant. Vitamin D neutralizing the toxic effects of vitamin A was demonstrated with rats in the 1950s. There were a few more studies but they are still old studies. That said, I ended up taking higher and higher doses of Vitamin D as well as complimentary amounts of vitamin K2, magnesium, B complex, phosphatidyl choline and trace minerals. This all took a lot of research to put together. Especially important is needing comparatively more K2 with really high doses of D3. I was taking doses of 120,000 IU of D3 a day, spread throughout the day and it was still not enough. I eventually got up to 180,000 IU of D3 a day, every day for months. Note: none of these numbers are typos. I was really worried about doing this while I was doing this. I would try to taper down every so often. Sometimes I could sometimes I couldn't. Balancing magnesium was dealing with the consequences of intense muscle cramping or diarrhea. It's not always easy to find that balance. I realized that the K2 also eased the cramping. If I had sensitive teeth, that means I need more K2 because gums are receding. Plenty of other symptoms with skin and other body parts as well. Just too much to include here. Anyway I've learned a lot since taking these megadoses of D3 since February. I've got some graduate level texts, monographs devoted entirely to Vitamin A, it's biochemistry, etc. Overall, what I've done has worked. I'm feeling much better now, but I am still taking 60,000 IU daily. When I step down to a lower dose, I'll notice if I get a twinge of liver pain. If I do then I go back up to where I was. So the main takeaway that I'd like people to know is that Vitamin A has a very long half life. The longest half life of any vitamin. Depending on the study, about 130-150 days. So figure about 3.5 - 4 months. I have gone over 2 vitamin A half-lives now, so that means I should have less than 25% of my original vitamin A load. Yet I still need to take 60,000 IU of D3 daily. I don't enjoy doing this. I want to bring down the amount of vitamin D that I take as soon as my body will allow. It takes about 6 half-lives to get down to just above 1% of whatever that high load was. There are no good measures for the total load. Also vitamin D3 has a half life of about 3 weeks. This varies according to the study, but it is much shorter so you burn through vitamin D much faster. The half-lives of K2 range from hours to 3 days depending on the MK-version you take. I can definitely verify this with my non-scientific self testing. I recently went to the emergency room for an unrelated matter. They did several blood tests. They didn't notice anything wrong with me regarding this and I didn't bother mentioning it. So I just wanted to relay this anecdote for anyone who happens to be interested. And to reiterate the very important take away. The long half-lives of fat soluble vitamins. Vitamin A has a ridiculously long half-life. So don't overdo it. Great content as usual, Dr. Berg.

Thank you so much for writing put your story. Very informative. I'd like to add to the takeaway here that this highlights the importance of taking D3 along with and in the appropriate ratio to vitamin A and k2. On the WAPF website there are many articles about all three of these vitamins. The appropriate ratio of A to D3 is between 4 and 8. To be safe my personal recommendation is to stay between 4 and 6.

@@JCX-9 I had no idea it was dangerous at the time, and also those were my dietary preferences. I was not examining my diet that closely at the time. It was only in the years after, that I began to unravel how I got into this situation. Also in the years before, I took fish oil specifically for vitamin D. It was always marketed for vitamin D, never for vitamin A. Most fish oil or cod liver oil products didn't even make a mention of vitamin A, even though they are usually higher in vitamin A than they are in vitamin D. And i think there is a difference between dietary vitamin A snd a supplemental vitamin A. The dietary A you shouldn’t have problem with, like the fish, cod liver oil etc, and yes you are correct they usually don’t mention it on the vitamin labels which is wrong. But also at the same time the multiple vitamin manufacturers stopped including the A in their vitamins. But this goes some years back already. I started seeing them now adding the carotenoid A again but that one is the one that doesn’t accumulate. I have it now in 2 of my vitamins, The reason i was kind of scared to take them but they are saying it’s safe as the source is vegetable 🥕 which is not fat soluble. Reading your post was very helpful as most of us don’t realize how dangerous the A can be. So I appreciate you sharing your experience and i hope you are ok now. 🙏
@marcv2648
@marcv2648 2 жыл бұрын
@@JCX-9 Yes you are right, carotenoids don't accumulate. Preformed vitamin is what accumulates. Preformed vitamin A is retinol. It has different effects depending on form, and moves around the body in various forms and esters: retinyls, retinals, retinoic acid, etc. Animal products will contain preformed vitamin A. If you have eggs or dairy even once a week, you will be getting plenty of vitamin A and won't need to supplement. To become vitamin A deficient is very difficult. You essentially need to be on an all grain diet for years before you will develop vitamin A deficiency. However, I think it's easy to over-accumulate if you have a diet rich in vitamin A. I think many people have a lot of minor symptoms caused by too much vitamin A without being aware, essentially sub-clinical hypervitaminosis A. I'm doing fairly well, but I still have symptoms. So still not over it yet.

I have a couple of questions. 1. Years ago, they said that it was the actual conversion process of beta carotene to vitamin A that helped your body out not the actual vitamin A itself. Is this not the case any longer? 2. Your chart shows that cooked vegetables give more than raw vegetables. Is vitamin A actually more accessible in cooked vegetables? They say cooking normally lessens the benefits. What is happening that vitamin A is higher in the cooked vegetables?

my vision became painfully light sensitive with too much vitamin A! it happened a couple times. not sure of the exact time frame, but i had 8-9 oz total calf liver servings throughout each week across 1 or 1.5 months. vitamin A stores in the body and accumulates. light sensitivity returns to normal in about 1-2 weeks after cutting back. the vitamin A abundance in liver has a great cavity sealing you may notice. it also has extreme toothache relieving benefit in about 12 hours of consuming 8 oz. ;)

Ok for those confused about where the 9000mcg came from. So Eric essentially normalized for 3oz of beef liver and used that as baseline hence that number. As others pointed out RDAs call for 900mcg and the upper limit (ul) is 3000mcg. So max you would need to consume is 1/3 of the numbers shown across the board. Confusing but the point is still valid; it only takes 3oz of liver compared to the rest.

@@rses916 The quality is very very important when it comes to the taste in the case of liver especially. In conventionally raised animals the nutrients are all out of balance and you get very intense bitter/irony tastes for example. I also find it milder if you cook it rare. You can also try a paté and having it with something else. That aside though, cod liver is still the most approachable option I'd say. To me it tastes like very buttery lightly salty canned fish. Personally though, I feel immediate energy and see my vision get sharper quite quickly after a serving of calf liver most of all. It took some getting used to but it started to taste sweet and craveable to me when i ate a serving once a week for a while.
