Fortunately my mother taught me to make bread a little over sixty years ago. Whole grains and sourdough were an important part of feeding the family in a healthy manner. I started baking sourdough all rye bread after talking to a Prussian neighbor. That was about fourteen years ago, and I am still at it. About 12# per batch, all mixed by hand. That burns a few calories. Toasted with crunchy natural peanut butter. YUMM!

Being a type 2 diabetic, I am very health conscious. I primarily eat a keto style diet, but eliminating carbs altogether doesn’t make me feel great. I do like an organic multi grain bread that I buy at Costco. My carbs still stay below 30gr per day. I totally lose my energy without any grains, but choosing them wisely is key. Many of the keto or carnivore “Docs” on KZfaq do not have type 2 diabetes, but opine on the subject all the time. If a person doesn’t have type 2 diabetes, it’s virtually impossible to know how a diabetic feels physically. I have done virtually zero carb, but that is NOT the answer. 1 Slice of organic multi grain bread at breakfast with eggs and bacon is perfect as the only time I’ll have this bread and that’s after a 15 hour fast.

I have my own grain mill and buy organic wheat from a local distributor. She searches out which farms in Canada are producing high quality wheat and sells it at wholesale to those of us who make our own bread. Because I mill it right before making it, the bread is loaded with nutrients and as fresh as you can get. Bread on store shelves does have germ removed as it goes rancid fairly quickly. However, I appreciate this video because bread and in particular gluten have gotten an unfair bad wrap the past few years. Yay for great bread!

The molasses is good for your bones, protein, manganese, calcium potassium vitamin B6, and copper. I don't feel like getting up right now, but if the oil is olive oil then it is a bonus. I am not putting down Ezekiel bread because I do eat it some times, but because it is frozen and refrigerated it has a tendency to spoil.

Many have bread as a bad thing for diets due to their glycemic index. That to my mind should have been one of your main considerations prior to posting this video. White and brown are tied in their GI index with others like rye bread and pumpernickel having the lowest.

Surprised you didn't mention Rye Bread. On some other video rye bread is sort of good but not as good as sourdough or pumpernickel bread if you are a diabetic. Someone in the comments mentioned the salt sodium is a bit high with Rye bread. I read 1 slice 45g has 210mg sodium on the Rye bread I buy. I figured Rye bread is better for you that whole wheat. I do take high blood pressure meds and have tried to reduce my daily salt intake. I very little regular salt and use salt free substitute (potassium chloride)

This is an exceptional video for those who love bread. I don’t eat bread anymore unless I’m in a restaurant and I splurge with a bread basket once in a blue moon. I lost my desire for bread by eliminating it. First I was obsessed with Ezekiel for a couple of years and then I just stopped completely. I’m not vegan or paleo or keto etc. I’m just an average woman who was told by her cardiologist to cut carbs for heart health and weight loss. It has worked wonders for me. I’m so much lighter in my step. I don’t need bread anymore. Lost weight. But for those who truly love bread this video offers the best advice! (My greatest concern was how can I eat eggs with no bread? I panicked lol. Now I enjoy a hearty 2 egg breakfast with no bread but with chicken bacon or chicken sausage. And organic cheeses. It’s delicious and very filling. Don’t miss bread at all!)

Bread is one of my favorite things, but it's something I do however eat in moderation, just one or two slices per day. I enjoy all the kinds you've mentioned and also pumpernickel bread, rye bread, and english muffins.

I agree and try to get it from a reliable source that actually makes it properly. Big box type sourdough bread is still often made by conventional methods. I get mine from a small local bakery that does it right. Garlic Chive sourdough bread. Only has 4 ingredients and 2 of them are chives and garlic. lol

@@melocinthwarner2353 Multigrain Bread Ingredients: 5 cups unbleached or whole grain flour 1 cup rolled oats (soaked in water or milk until soft) 1 cup coarse wheat bran ¼ cup chopped unsalted pumpkin seeds ¼ cup chopped unsalted sunflower seeds ¼ cup chia seeds ¼ cup flax seeds 1 egg 2 tablespoons butter 1 ½ teaspoons salt 3 tablespoons brown sugar or honey 1 ½ tbsp. dark molasses 2 teaspoons instant yeast OR 1 packet active dry yeast* 1 ¼ cups milk Directions 1. Place milk, honey, molasses, salt and butter into small pan and heat on low until butter melts stirring occasionally so the salt is dissolved. Pour into large mixing bowl and let cool to about 110 degrees F. Add the yeast stirring gently and let it set for 10 to 15 minutes. Should get thick. 2. While the liquid is cooling mix 3 cups of the flour and the wheat bran together and beat the egg. 3. After the 15 minutes is up, mix the egg in the liquid mix and then add the soaked oatmeal. Mix well. Add the seeds and mix well. Then start adding the flour mix. You can do this by hand or use an electric mixer. Keep mixing until a nice ball is formed. The dough should be sticky but not gooey. 4. Knead for 10 to 15 minutes. Let rise for 1 ½ hours. 5. Preheat oven to 350 F. 6. Knead the bread gently to deflate. 7. Lightly oil all sides of a bread pan. Take the dough and shape it into a log and place it in the bread pan. Press the dough into the pan gently so it is spread evenly and into the corners. 8. Let rise in the pan for about ½ hour. The top of the dough should be about1 ½ inches higher than the pan. 9. Place in oven and bake for 35 minutes. Check with toothpick. Remove and let cool before removing from pan Yield: 1 loaf.
