We are lucky to have harvested a lot of courgettes in our vegetable garden. It's one of our favorite vegetables. You can make so many different dishes with it, or even desserts. This Italian recipe, more precisely from Tuscany, is divine! According to tradition, this "vegetable garden cake" was baked by bakers at the end of the day, the oven off but still hot. My dad prepared it with grated parmesan that we brought back to France with us and garlic and bacon bits - you will have understood, he was very greedy. So you can do without lardons, parmesan and garlic. Good tasting !
1- This recipe can also be made with chickpea flour.
2 - It can be eaten hot or cold.
3 - You can add rosemary (it's an equally delicious variant) but here I use rosemary flavored oil.
4 - The zucchini pie must be thin enough to obtain softness and crispiness.
5 - You can also add the zucchini flowers (but I've already breaded the ones I had).
Ingredients :
- 2 onions
- 100 g of turkey or pork bacon
- 1 courgette of 800 g
- Salt
- 150 g of flour
- 4 eggs
- 250ml of milk
- 3 cloves of garlic
- 100 g of grated parmesan
- Olive oil
