COCONUT CAKE
- 150 Grams of 00 flour
- 150 Grams of coconut flour
- 3 eggs
- 200 Grams of Sugar
- Yogurt 300 Grams
- 100 ml of seed oil
- 1 sachet of baking powder

In a bowl with high edges, add the 3 eggs to the sugar and mix them with a mixer until the mixture is swollen and frothy (it will take about 10 minutes).
Gradually add the seed oil by lowering the mixer speed.
Add the yogurt to the mixture a little at a time and continue mixing with the mixer.
In a glass, sift the flour with baking powder and add it little by little to the mixture, mixing everything with a spatula.
Add the cocoa powder and continue mixing.

Pour the mixture into a 24 cm diameter mould, previously greased and floured.
Level with the help of a spatula.
Bake at 180 degrees for 30 minutes.
When ready, turn off the oven and open the door slightly, leaving the cake to cool for another 10 minutes.
Remove from the oven and leave to cool completely.
At this point, prepare a syrup of water and a little sugar and spread it along the surface of the cake with a small brush.
Top the cake with a brush of coconut flour.
