Full written recipe Prawn ghee roast
Prep time: 25-30 minutes
Cooking time: 30-35 minutes
Serves: 2-3 people
Ingredients:
For roasting spices
Coriander seeds 2 tbsp
Cumin seeds 1 tsp
Black pepper corns 1 tsp
Fenugreek seeds 1 tsp
Mustard seeds 1 tsp
Poppy seeds 1 tsp
For paste
Byedgi red chillies/ Kashmiri red chillies 10-12 nos.
Cashew 3-4 nos.
Jaggery 1 tbsp
Garlic cloves 8-10 nos.
Tamarind paste 2 tbsp
Salt to taste
Water very less
Method:
Set a pan on high flame & heat it well, once the pan is heated lower the flame & add coriander seeds along with the remaining whole spices, roast them well on low flame until fragrant.
Now take the whole red chillies & remove the seeds by cutting them with the help of a scissor
Add hot water & soak the deseeded chillies & the cashews together in a bowl, once soaked add them into a mixer grinder jar along with the roasted spices.
Then add the remaining ingredients of the paste, make sure that you use very little water, grind all the ingredients into a fine paste.
Making the ghee roast
Ingredients:
Marinating the prawns
Prawns 400 grams
Salt to taste
Turmeric powder ½ tsp
Lemon juice 1 tsp
Making the ghee roast masala
Ghee 6 tbsp
Curry leaves 10-15 nos.
Lemon juice 1 tsp
Coriander powder a pinch
Method:
To make the prawns ghee roast you will need to marinate the prawns, for that de vein the prawns & wash them thoroughly.
Add the de veined prawns into a bowl & add salt, turmeric powder, lemon juice, mix well & keep them aside until we make the ghee roast masala.
For making the ghee roast masala, set a pan on high flame & heat it well, further add 3 tbsp of ghee to the pan & let it heat nicely.
Once the ghee is heated, add the paste that we made earlier & cook it on medium flame while stirring continuously, cook the paste until it darkens & gets crumbly.
When the paste is cooked add some hot water to adjust the consistency, you will notice the change in its colour & texture, switch off the flame at this stage & cook the prawns in a separate pan.
To cook the prawns, set a pan on high flame & heat the remaining 3 tbsp of ghee then add the marinated prawns into the pan, cook the prawns nicely from both the sides while stirring on high flame, make sure that you don’t overcook the prawns or else they will turn chewy.
Now add the cooked prawns into the masala & stir it well, further add curry leaves, lemon juice & coriander powder, stir & cook on high flame for 2 minutes.
Taste for salt & adjust accordingly at this stage.
Your prawn ghee roast is ready.

My mom cooked this dish yesterday, it was very very yummy. We have tried multiple recipes of ghee roast but it never used to taste like restaurant. One great tip which improved the dish was removing seeds from chillis. Thanks a lot for this lovely recipe 😊

Had been to a wedding in Karwar and tasted the Prawns ghee roast for the first time and fell in love with it. Came to Bangalore and got hold of this recipe. It came exactly like I had in Karwar, I added extra 4 red chilies due to which it became a little spacey. Will stick to recommended 10 chilies next time. It was so delicious. thank you, Sir! Had a ghee roast from a restaurant once some years back and really loved the taste. For some reason they stopped preparing it. Went through a lot many recipes over the years and finally today after preparing your recipe, voilà, found that recipe and taste. Lip smackingly delicious and exactly as we love it. We tried the recipe today for lunch and all of us at home loved it a lot... The tanginess from the tamarind along with the poppy seed nuttiness made it a hit. As you said it is one of the best yet simplest prawn recipes I ever tasted. This is surely gonna be made repeatedly and next time for sure with neer dosa.

I tweaked this recipe a tiny bit by adding sugar instead of jaggery and frozen prawns instead of fresh ones. But it turned out YUM. Such mein bahoot Yummy lag rehe hai. Prawns mere favorite hai. I want to try this.. Poppy seeds uae mein nahi milega.. Without poppy seeds can i prepare this receipe?

Just wow…. I was literally watering 😋…. But whenever I prepare prawns it always tastes sweet…please suggest me where I may be going wrong…plz….

They must be sweet water or ricer prawns. Try sea prawns. They have a different salty flavor. Try and use some khatta(sour) in the recipe, might cut some sweetness. Also add chilli powder or chillies and also some garam masala.

It depends on the variety of prawns you are using. Fresh water prawns are sweeter. Also if you under season then they would tend to taste sweet.
