Welcome to our channel! Today, we take you behind the scenes of Torake, a top sushi restaurant in Vancouver, to experience a day in the life of head chef Jeff and his team.
Jeff, 28, is the head chef and co-owner of Torake. Every morning at 8 AM, he handles social media messages, feeds his three cats, and prepares for his day. Due to the busy weekends, Jeff and Hanson, his partner, prepare ingredients on Wednesdays and Thursdays. Today, Jeff is testing the new summer menu and is heading to Richmond Country Farm to buy fresh produce, which is particularly fresh as it comes directly from local farmers.
Torake offers high-end sushi, selecting the best seasonal ingredients for custom menus. Hanson is mainly responsible for making sushi at the front. Upon arriving at the restaurant, Jeff cleans and organizes the space, then prepares ingredients based on reservations. Their seafood mainly comes from True World Foods, a company with over 30 years of history in importing and exporting seafood. Today, they purchased fresh fish such as halibut, yellowtail, sea bream, Japanese bluefin tuna, and bafun uni.
Hanson scrapes off the fish scales, removes the entrails, cuts the fish into pieces for marinating and storage, and slices it into sushi when customers order. They also bought fresh Korean abalone, which is often used in high-end dishes. Torake usually only serves dinner but also offers lunch on weekends. Jeff focuses on cooked dishes and desserts, while Hanson handles sushi and sashimi. After lunch, they continue preparing for dinner and test the new summer menu, inviting us to taste.
