我覺得這款餅乾裂紋超可愛!好像迷你波蘿麵包,從側面看小小厚厚的。因為外面裹了砂糖,所以有薄薄一層外殼,裡面口感微微鬆軟,吃得到清爽的檸檬香氣,夏天吃非常幸福!如果用漂亮的袋子裝起來,再綁上緞帶,拿來送禮超級體面的!如果用紙盒裝起來,瞬間就變成高級的日本餅乾禮盒了。到底是我有媽媽濾鏡,還是他們真的很可愛啊?
:食譜:
食材▼
○餅乾麵團
低筋麵粉 300 g
砂糖 160 g
無鹽奶油 85 g
檸檬汁 2 大匙
檸檬皮 1 顆
雞蛋 2 顆
泡打粉 1 小匙
鹽 1/4 小匙
○裹粉
砂糖 70 g
糖粉 70 g

These cuties are my favorite cookies recently! They have a very thin sugar crust shell outside and fluffy, cakey texture inside with nature lemon aroma. It's good to be a gift for your loved ones as refreshing summer treats!
:Recipe:
Ingredients▼
○Cookie Dough
cake flour, 300 g
granulated sugar, 160 g
unsalted butter, 85 g
fresh lemon juice, 2 Tbsp
lemon zest, 1
egg, 2
baking powder, 1 tsp
salt, 1/4 tsp
○Coating
granulated sugar, 70 g
powdered sugar, 70 g
:Instruction:
●Making Preparations
1. Melt butter with a low heat. Set aside.
2. Make lemon zest with a zester. Be careful to not grate the white part.
3. Add zest into tje small bowl with sugar.
4. Rub the lemon zest with granulated sugar with your fingers.
5. Cut the lemon into wedges and squeeze the juice.
●Making the Dough
6. Add lemon sugar and melted butter into a mixing bowl.
7. Mix them until well combined.
8. Crack an egg into the mixing bowl at a time.
9. Mix them until well combined.
10. Add the second egg. Mix them until well combined.
11. Add 2 Tbsp lemon juice. Mix them until well combined.
12. Add baking powder and salt.
13. Sieve flour into the mixing bowl.
14. Gently fold in until just combined.
15. Transfer to a freezer for 30 min. or fridge for at least 2 hours to let the dough become harder.

16. Scoop about 20 g dough and place on a baking sheet lined with baking paper.
17. Transfer the part you want to store and bake in the future to a freezer for about 20 min.

20 min. later ◆
18. Place the cookie dough into sandwich bags and transfer
to a freezer to store up to 1 month.
19. Continue to do the following steps when you want to bake the cookie dough.
●Shaping the Cookie Dough
●Preheating the Oven at 350℉/ 180℃
20. Scoop about 20 g dough and shape into a ball.
21. Place the dough into the small bowl to coat with granulated sugar thoroughly.
23. Transfer to another small bowl to coat with powdered sugar thoroughly.
24. Place the sugar coated dough 4 cm apart on a baking sheet.
25. Transfer to preheated oven.
26. Bake at 350℉/ 180℃ for 15 min.
