A bread proofing basket, also called " #banneton" in English, or called "Cane basket #發
酵籐籃" in Chinese, #発酵カゴ in Japanese, is available in various sizes and shapes in the market. It is mainly used to make country bread during the stage of final proofing. Since dough of country bread tends to have high water content and easily loses its shape during final proofing. Using a proofing basket or a container helps to reduce moisture in the dough and keep the shape until the bread is loaded in the oven.
A few days ago, I bought two "16cm" bannetons" for the series of "baking two loaves at once in Japanese microwave steam oven". I used them and the result was great. The size is just right for my oven. The quantity of flour ranges from 180-220g. I have a 21cm round banneton, which can contain 300-350g flour. I also have a rectangular banneton, its width is 21cm, which allows to contain 320-350g. You can place the dough in the banneton without lining any cloth. Just remember to dust enough flour like "Semolina", "wholewheat flour" or "rice flour" to keep from stickiness. If dough is left unlined, the basket pattern will get imprinted on the bread. I like to line my baskets with a piece of cotton cloth, not only because it can keep stickiness but also can keep it clean.
If fact, there are many "substitute" items at home we can use as "proofing basket" like "soup bowl" or "rice bowl" or "food storage container" or "cookie container". Simply place the linen over the container, Make sure you dust enough flour to avoid sticking the dough in the clothe and then you can place shaped dough in it.
How to clean a banneton:
Use clean and dry small brush " like toothbrush" to remove the dust or buildup stuck between the grooves right after every use. Don't use soap, or cleaning detergents while cleaning your banneton. It is not recommended to get "banneton" wet and have them dry under the sun either.
