面包是我家的主食之一。自从5年前有了美善品之后,我尝试过烘培各类面包,因为有了美善品,做面包简直是万无一失。 我是常常跟我的周边人这么说的。
我决定拍摄这一款因为这是我们常吃的面包。 一般上,我一个月会烘培这汤种牛奶面包一次, 这一个食谱做出来的面包我大概可以吃上半个月。放进冰箱慢慢吃,面包收在冰箱10天都不会发霉。 如果是在超市买的面包早就发霉了,更何况他们还放了防腐剂。用汤种做面包不需要防腐剂,耐得更久,面包更柔软。如果从冰箱拿出来稍微放10分钟就变软了,切一片,烘5分钟就外酥内软。这…对我来说就是简单的快乐。
汤种材料:
• 高筋面粉40克
• 水200克
面包材料
• 鲜奶260克
• 糖60克
• 酵母10克
• 高筋面粉580克
• 奶粉10克
• 盐12克
• 鸡蛋50克
• 黄油/牛油50克
Bread is part of the staple food in my family. Especially when I started having Thermomix, I have more confidence in getting the dough right, in fact, it is 100% success rate by far.
I choose to showcase this water roux or tang zhong milk bread as I would bake this bread at least once a month. The rest of the more fancy version will have to depend on my mood.
Tang Zhong ingredient:
• 40g bread flour
• 200g water
Bread ingredient:
• 260g milk
• 60g sugar
• 10g instant yeast
• 580g bread flour
• 10g milk powder
• 12g salt
• 50g egg
• 50g butter
You can bake this bread without Thermomix too with the same ingredient.
