We are hanging out in the kitchen today! We are going to be making:
-Zucchini (faux apple) crisp
- Cucumber salad with onions and red wine vinegar
-BBQ chicken sourdough pizza

Cucumber Salad:
1 pound cucumbers, thinly sliced
1 1/2 teaspoons sugar
1 1/2 teaspoons kosher salt
2 1/2 tablespoons red wine vinegar
1/2 small onion, thinly sliced

Zucchini Crisp / Crumble:
8 cups peeled seeded diced zucchini (about the size of canned pineapple chunks)
2⁄3 cup lemon juice
1 cup sugar
1 teaspoon ground cinnamon
1⁄2 teaspoon ground nutmeg (omitted)

Crumble Topping
2 cup rolled oats / oatmeal
2 cup ap flour
2 cup brown sugar
1 tsp baking powder
2 tsp cinnamon powder
1 cup butter, melted
Bake
375 degrees for 40 min
Cold Cucumber Soup with Yogurt and Dill:
2 large cucumbers (2 1/4 pounds)
1 1/2 cups plain Greek yogurt
3 tablespoons fresh lemon juice
1 small shallot, chopped
1 garlic clove
1/3 cup loosely packed dill ( I used dried)
1/4 cup loosely packed flat-leaf parsley leaves
2 tablespoons loosely packed tarragon leaves (omitted)
1/4 cup olive oil, plus more for drizzling (used slightly less)
Salt
Fresh ground white pepper
1/2 red onion, finely chopped (omitted)

Thank you so much! I am loving this kitchen too ever since we moved here. I didn't have any counter space at our old house, so I feel so blessed every time I get to cook here. I think I tell Ryan at least 1 or 2 a day how much I love having counter space and a big oven haha. Let me know how it tastes with the yellow squash! -Cara

We made the zucchini crisp for our daughter’s birthday (she requested apple pie but we were out of apples 🙈) but we made it as a pie with the crumble topping. Holy cow was it a hit! I mistakenly left the seeds in, but it was still really good! I could see that the texture would be pretty much spot on without the seeds though. We are now going to refer to it as magic zucchini pie 🥧😁 And you weren’t joking about that crumble topping. That’s my new favorite crumble topping recipe 👌🏻 Thanks for sharing Cara! Chelsea

OK so this is probably the best fit to my taste buds video I've ever seen!! Sourdough pizza yes and that flavor is our favorite! (Although yours is prettier than mine!) Cucumber salad, I've been wanting to make this now that our cucs are coming in! This is happening! Gazpacho is the bomb!!! I am the only one in my house who will eat it and I love it! I'm inspired to make a version of this one! Zucchini crisp?!?!? This is happening! Those sundried tomatoes would be bomb diggity on one of those pizzas too!! Aww thank you so much! I actually bought that dress from Amazon. The dragon's egg cucumber are really fun I think, something kind of unique and they still taste great too. Oh Cara! Amazing! Watching while I work planting today! Stand outs for me were the cucumber soup! The colour 💚 love it… and great suggestion on the addition of honey 🍯 sun dried tomatoes turned out great too 💞🙏💝

Thank you Anita! I had enough soup for two days worth. The first day I ate it I used a little bit of greek yogurt, red onion and herbs as my topping and then the following day I did some honey. Both were great, but I think I favored the honey topping the most!

Oh my goodness Cara! This is an amazing video, and I just subscribed to your channel. I made sourdough pizza yesterday but I didn’t know you could use only the discard to do so! I don’t like wasting the discard so I end up keeping it and have a lot of sourdough starter. A giant mason jar that we use to use for storing flour is what I keep it in. I’m going to try this next time we make pizza. And the zucchini apple crisp is an wonderful idea! My youngest daughter keeps asking me to make desserts out of vegetables so this is on my list to try next. I’m off to watch more of your videos. Thank you for sharing, have a blessed day.

I have never thrown any of it away haha, I just can't bring myself to do that. I keep mine in the fridge and just pull it out once a week to feed it. Hi Cara! I love your kitchen set up. Looks so neat! 😍 I’m not a big fan of using my cast iron as it is very heavy and hard to clean but you’ve convinced me to use mine again 😃 might try this healthy recipe with my daughter. Thank you so much! I know what you mean about the cast iron being heavy, that is my one complaint about them too. I have one that has short sides (maybe a quarter inch high) that is a lot lighter. I used that one more often, because of how light it is. I almost exclusively use my cast irons now though. The more you use them though the better they become nonstick wise and I find them to be more non stick than my other pans. Hopefully you will give your a try again. It is one of those things where you have to use it often in order to really build up that nonstick factor. Also preheating it before cooking helps too.

Isn't that sour dough pizza crust so easy!? We really love it. The zucchini crisp really does taste identical to an apple crisp. I would not have known that it was zucchinis unless I had made it haha.

A zucchini pie would be delicious! I could see how that would work too! The cucumber salad is so good and refreshing! Just so you know I think the cucumber salad is best eaten the same day you make it. If you leave it in the fridge overnight it will extract more water from the cucumbers and become a little runny and not quite as crunchy. :) I hope you enjoy it ad much as we do! -Cara

@@bluebirdhomestead Thank you!! I will definitely put in much more effort next year and start planning much earlier. I think my issue this year was that I was too late with planting and taking my seedlings outside. I had many plants growing well for a while but it's obvious now that most of it won't grow to full size before the season is over hahaha our season is quite short here. So next year will need a little more dedication!

@@ATravelerOfWorlds With every year that you garden you will get to know your area and learn a little more each time! 😊 There are great resources online you can look up to know when to start what indoors. For example I typically start tomato seeds 8-10 weeks before my last frost date. 😊

This is my second summer here and it's only now that I have more of a vision for it for next year, when it comes to gardening, observing the sun and deciding where the best spots for growing are. It's really exciting!! I'll start the process and do my research much earlier for the next season haha

I have never tried the zucchini “faux” apple crisp with yellow squash before just zucchini. 😀 It was really good though!! Our favorite way to cook yellow squash is to grill it with a little olive oil, salt and fresh ground pepper. We typically only grill it for a few minutes, so that it is still firm. I don’t really care for it when it get mushy haha. I grew up on a farm so I have always loved helping out in the garden and my parents encouraged us kids to have our own “plants”. This is our second summer gardening on this new property though. At our previous homes we only had room for one raised bed and some pots. So having this much space to garden is a dream, I have missed it. 💚💚💚

The last 3 yrs our house flooded 3 times, so it was time to head to higher elevation. We moved here in our 1 Acre lot 3 years ago this Month. We absolutely Love it & it's cheaper to live here. Lower property tax less than our small normal sized yard we had. Plus, our Electric stays below $100.00 a lot!!! Our place is 1388 sq foot. What size is your place? It's just my husband and I with our 12 Yr old Shih Tzu Kosmo. I have him on videos too. I'm enjoying chatting with you. 😊😊😊* Sharon in SC

@@connectionoflivesandinterests We have some wooded acres, but about 15 acres of fields around our home on this new property. We are excited to have all of this space to garden and develop in the future. We have lots of big plans for it haha. We are hoping to plant a fruit orchard sometime in the near future! I am really excited about that! 😄Do you have any fruit trees or varieties you'd recommend?

Hi Rain! Thank you so much for such a nice comment as always! My father likes to find rusted cast iron skillets at goodwill and restore them. It is a great way to find one at a good price!You should give the sun dried tomatoes a try! They taste soooo good. I kept sneaking them out of the dehydrator and snacking on them as the cooked haha. -Cara

Everything looks great! I’ve made sourdough pizza crust, but I’ve never tried it with only the discard before - it’s great to have a new idea to use the discard! Also, I’ve never used baking powder in my crisp topping - does that make it rise a little or give it a different texture?
