This video is about how to make ZUPPA TOSCANA SOUP.
Zuppa Toscana is a soup served at Olive Garden Restaurant. We love eating there but I always say, I can make it better. So I finally decided to write my own recipe and honestly, it's fantastic. I hope you enjoy it.
ZUPPA TOSCANA SOUP
INGREDIENTS
1 pound Italian sausage casings removed
1 red onion chopped
1 yellow onion chopped
2 large ribs celery chopped
2 large carrots chopped
8 toes garlic minced
4 medium or 3 large potatoes sliced
8-10 leaves fresh basil
8 cups fresh spinach or kale.
Olive oil
1/2 cup white wine (dry and not sweet)
2 cups whole milk
1 cup cream
2 Tbsp. Italian seasoning
1.8 L hot chicken stock
1/4 cup green onion tops
Black pepper
Salt to taste
Parmesan cheese
2 Tbsp. Sicilian Seasoning
1 Tbsp. Vegetable Seasoning
INSTRUCTIONS
Fry off the sausage and reserve
Same pot, add a little olive oil.
On a low heat, sauté onions, celery, carrot and garlic until soft.
Add white wine and the liquids from the sausage.
This will deglaze anything that was stuck to the pot.
Once your carrots are softened,
add back the sausage, then add in the milk & cream.
Add in the chicken stock and all spices.
Add fresh basil.
Stir.
Add the kale or spinach along with green onion tops and basil.
Taste and adjust spices.
Add Sicilian seasonings and vegetable seasoning.
Add potato slices.
Simmer for 30 minutes.
Serve with a garnish of grated Parmesan cheese.
Chef's Notes: You must adjust salt and pepper to your taste.
