If it is store bought then yes add two tablespoons. If homemade then the flavours are more intense so one tablespoon will be enough.

Hi can we use a glass jar and omit spices?

With glass jars there’s a risk of the sealed cannister cracking upon fermentation. But you can use ceramic ones which i believe are more durable. As for the spices, yea you can do without them if you don’t prefer them.
