I had the same idea, that it was a pomegranate drink, but I’m not Mexican and I don’t live there so I went to the locals for their take. Do you live in Mexico? What’s your recipe?

The following are all approximations. 3 to 1 proportion of orange juice to lime juice (steep slice of onion in lime for 20 minutes, remove) by volume. A few dashes (3-4) of hot sauce. 1-2 tablespoons pomegranate juice. A pinch or 2 of powdered chile (I use tajin). Maybe add a pinch of salt (I don’t). I’m not Mexican. Check out the Wikipedia entry on sangrita for information on how it originally came to be.

It would seem that after filling your trays with water and letting it sit on the counter for maybe 20 minutes before putting it in the freezer would allow more time for the impurities to settle through the holes.

Impurities go to the bottom when freezing not sitting.

Yeah it's more that the water freezes in one direction due to the insulation on 5/6 sides. this means that the impurities and air are pushed away from the side that is freezing as it freezes. Making the Ice clear until the point that it eventually freezes all the trapped air and impurities.

While this is a good overview of how to do it for parties and events this is not great for a cocktail that might be sitting for an extended period. Using the air brush pump (which is not designed for food and therefore possibly not safe for this use) you will oxidize your cocktail over time. This means that for example your vermouth will go bad. Using CO2 will carbonate your cocktail. This is fine if you're making a carbonated cocktail but if you are making a negroni you probably don't want it carbonated. If left at pressure with CO2 all waterbased liquid will carbonate, the level of carbonation will depend on temperature and pressure (more pressure = more carbonation, lower temperature= more carbonation). If you really want to do this and leave the cocktail for an extende period I'd set the pressure pretty low (2-4 psi) and not keep the cocktail too cold and simply serve it over ice with a quick stir.

That 2 year old calvados in oak casks is fab. Im a brit. Do canard or duck, black french coffee, a glass of pom or calvados, then bite a sugar cube. Its the duck or canard, a local tradition in 20 below when its brass monkey snow. Im drinking Deribeaucourt calvados in london i found in Lidl or Aldi for £15 a bolltl. 2 years kept in oak barrels, great gear.

Love your work BTN ... That "insulated" container ... have you just stuck aluminium foil to the outside??? I'm intrigued because I'm wondering if a small cooler really makes that much difference as you seem to get the same results with your "COOLER" Many thanks

I now use a small cooler box from a Amazon if I’m needing to make my own ice, at the time of making this video I wasn’t able to find one and had sort of added insulation (the silver stuff is bubble insulation) to a tub I was using that fit my freezer. As I was discovering that Reverse osmosis, boiled water etc wasn’t going to do the job I started insulating the container more and more. The insulation was bought online from Amazon and is actually really good insulation.

Yes, but before you do that, once they’re out of the mold, freeze them for 15 minutes or more and make sure they don’t touch so they don’t freeze together. Then you can place them in a ziplock bag.

Good video, big mistake! The metal container is not good for any acidic food including lime and lemon. Glass containers are the best.

I’m not a geek, you’re a geek. But okay…I have thought about making spreadsheets for very specific detail oriented things, glass vs cocktail volume being one of them. The volume of drinks in coups at my place is larger than the coups 🤦‍♂️

Yes 100%, so it’s better to be moving through it reasonably fast. For that reason I have some really small kegs

Yes the CO2 will eventually force its way into the liquid and carbonate it, you can use Nitro gas to avoid that. Or as I did in this video use a compressor. The compressor method isn’t the most “beverage safe” tested method but I’ve been doing it for years and never had an issue.
