I have buddy with older kawasaki ex500 sport touring bike. I can ride that thing all day I mean 10 hr ride with only gas stops and be comfortable pop on some nags and tank bag if you are my size 57 140lbs it is plenty of power and torque to cross the country. Can easily run 80-90 all day and never break a sweat but light enough to have a bit of fun on back roads if you like scenic trip not just interstate mile eating ride, but can do both. Being my size the largest bike I ever really like long rides was brothers 85 900 ninja, by todays standards it is sport tourer. Find old used one well taken care of it is enough bike for big guy touring, or a older concours or best full size sport tourer ever made the older yamaha FJ 1100 or 1200, air cooled simple and run for ever and enough power for a big guy and gal and luggage, and I rode 2 way back when, they were lounge chair comfy. very smooth but torque monsters. if you look back to early 2000s and late 90s there are many good non full touring bikes you can ride all day and not be sore.

I rode cross country on a stock 1970 Triumph Bonneville. There was not many after market windshields or saddle bags available then. And few people bought such. I rolled everything up in my sleeping bag and tied it onto the back. Point being is that you don't need a bike labeled touring to tour. Motorcyclist today are cosplayers. The outfit and gadgets mean more to them than the bike or the ride. All that needless crap is cool IF you actually ride the bike.

These days it seems that a "touring" bike needs to have ever techno-gizmo known to man... I suppose, to each his own... I envy your upcoming Alaska trip... but for me over many years, basics are best... many decades ago I rode over much of the US (not all in one trip... just meandering) on a Norton P11A -- didn't even have fenders or mufflers... engine, frame and headlight/taillight... and it did just fine -- from snow of the Dakotas to the beach of Padre Island and lots in between... eventually I decided that a windshield was a good deal for the long-pavement (and a custom saddle), but even after 400K+/- miles I've never ridden a bike with ABS, cruise, piped in music or hot/cold running water... the good thing, is that folks can "tour" in whatever mode they wish... now past my mid-70s I don't ride as much as I used to, but I still think (for me), the necessities are windshield, good saddle and some sort of s throttle/friction lock... I keep thinking about mounting a GPS, but haven't really felt the need yet -- maybe for my 80th birthday... 😄

I own a 2018 NC750X and I love it, but for it to be the most practical bike in existence, it would need something better than chain drive. Honda really missed the mark by giving it a chain, there's nothing practical about chain drive, and the NC should of course have had either shaft or belt drive, that would have made it perfect.
