Nettle leaves can be boiled for a few minutes then eaten. I have done this many times. Tastes exactly like spinach. And no. It doesn't have the slightest sting.

FESH NETTLE TEA without drying the nettles, with gloves on pull or snip off the top 2 or 3 sets of leaves + stem from 2 or 3 or 4 nettles (depending on what strength of tea you like!) and place them in an almost-boiling water saucepan 500-1,000mls water (I have heard 90 degrees maximum) and cover with the lid then drink it 20 minutes after it should still be a bit warm if the nettle is seeding that's fine, the seeds are really good for the body just don't choke!

I used dried as they are less stingy. I think it's ok to use fresh as well. Dried nettle also lasts for longer

I love Buckwheat, but I am apprehensive about it containing Glyphosate. Roundup's active ingredient and carcinogenic to humans. How and where is yours grown and do you think it safe for your family to eat?

Thank you for your comment. This is a meal plan that I put together for my family and we pretty much stuck with it. We always do. Our priority is to expose our kid to a variety of foods and meals. We don't have the expectation that he will eat them all but the mere fact that he gets to see what options exist, allows him to play, explore and decide whether to try them or not. I always have super speedy backups just in case. The fact that we exposed him to meatballs and tuna, allowed him to start eating them even if it's in small quantities for now. When I met my husband he would not eat salads but now one of his favourite meals is a massive salad with tuna. I also employ best practices when it comes to meal prepping and cooking that have helped me cut the cooking time to a fraction of the time such as cooking lots with a pressure cooker or having meals ready to consume in the freezer from the week before. I have 3-4 days cooking free almost every week. My husband was always for ordering in and because we always have ingredients for speedy meals available, he has stopped suggesting it that much. It's quicker and easier to actually put something together ourselves. So, I think before judging the meal plan, or deciding that it doesn't work. You could employ more of a curiosity mind and explore how this meal plan works for a family when for yours it looks like it may need lots of effort. I welcome any questions you may have about the meal plan. Thank you again for giving me the opportunity to clarify a few things about the meal plans I share.

Yeah but I end up spending all day in the kitchen meal prepping for my family of 4 on Sundays and losing valuable time with my loved ones. Maybe I prep wrong lol.

I feel you. I used to spend quite a lot of time cooking. Now I just meal prep on a Saturday or a Sunday for one hour. I always ask myself - what can I meal prep in an hour that will make the biggest impact in the week and I always end up washing fruit and vegetables, pre-cut some of them (not all) and preparing two raw freezer meals. So a day before cooking the raw freezer meals, I thaw them and then add them in a pressure cooker and cook them. When I cook freezer friendly meals, like lentil soup or meatballs, I cook three portions per person, we eat two on two consecutive days and one in the freezer for the following week. This way I save soooo much time. Also I always have pre-cut vegetables in my freezer (I usually pre-cut some every week and it adds up) so to make a lentil soup this week I mainly grabbed pre-cut veggies from my freezer added lentils and water and left them to get ready. I also use a pressure cooker that cooks food in 1/3 of the time of a conventional pan. Life changing!!!!!

Hi Christina, so happy to find your channel. I see it’s been 2 years since your last post. I hope you’re still able to post. I subscribed mostly because of the channel name. I lost my Greek momma/my wife of 40 years last July. We’re old now however you look very much like my Greek princess when she was younger 🙂 I also watched this because the last thing Lisa baked was lemon cake! She was only the second generation born in America. Over our lifetime I learned to love many traditional Greek foods. I know I’ll enjoy watching many of your videos. God bless and good luck with the channel in the future!

1. I eat green leafy vegetables, i.e. with lemon juice - that helps iron absorption from plant based sources. 2. I do eat red meat a few times a week as my iron level drop significantly during pregnancies. 3. I also avoid coffee or tea 1 hour before and after meals or supplements as they can interfere with iron absorption. 4. Lastly, my doctor prescribed Viofer iron supplements which is a drinkable iron with vitamin C. Hopefully these are helpful. Double check with your doctor as well in case they can recommend something else.
