WHAT ABOUT THE BRINE?! NEVER smoke a chicken without brining first! You didn't tuck the wings under or tie the legs. And instead of poking all those holes in it with the instant read thermometer, why not just use a leave in probe? Your Pit Boss already has the ports for them.

I don't always brine chicken when I smoke it. Don't think it's necessary all the time. Will it help make it more tender? Sure. It also adds a lot of time and prep to the recipe. Which is why I sometimes omit that step because I don't think it's crucial. Not overcooking the chicken is what's crucial. As to your other comments. There are many methods to get to a cooked whole chicken. If you want to tuck wings and tie legs go for it. My goal here was to show you seasoning and flavor and method. Hope this helps. As for the pitboss comment I've noticed it's not accurate.

Ita different each cook. You need a good probe to be sure it's cooked good. Last time at 250 to 275. It'll probably range around 2.5 to 3 hours or so.

I still have it I just don't use it lol. It has a little heat but I wouldn't define it as spicy. It's not like hot sauce is more of a spice. Like a warm chili or curry

I followed this exactly today, but I wrapped it in a towel and put it in a cooler because I had to hold it for 6 hours...but this was absolutely delicious. I've done your ribs too. You're my favorite smoker to watch on KZfaq! You should do a pizza😁 I'm gonna use pork leftovers for a pulled pork pizza

That's awesome so glad it turned out great! Yeah if you ever have to hold it long that's a good idea. Sometimes I'll turn my smoker on to 180 the low smoke mode and just let it stay at that temp for a few hours and then take it out to rest. There's ways you can mess with the times to get it all worked out

Great question. I don't think they do and never had anyone tell me they thought so. I think with how Cheesy the sauce is and the added mayo and sour cream it really helps keep the noodles moist. If you're worried about it try just 30 minutes

Have you found any that small? I've always gone to Sam's club, costco, gfs. They're always around 6-10 pounds. Usually always on the heavier side. The times will be shorter the less pounds it is. I would never go by time though. I would smoke one that small at a lower temp and use a good probe. When it hits around 170ish wrap it up and still pull it out when it's over 200 and really tender. Still rest for several hours. In a cooler preferably. Hope this helps

I never uploaded it sadly. I just kept making bbq videos. Once done cooking let it cool off a bit to its still but able to handle. Rinse with warm water and if there is stuff stuck to the pan you have to scrub it off with a brush. NO SOAP EVER. Once it's clean dry off with paper towels and put it back on the stove to medium heat for 5 minutes. Take it off heat and put a TBSP of avocado oil on it and take another paper towel rub the oil over the whole pan and then put it away like that. The oil helps preserve pan

Yeah of course. Smoke it till it's not runny and creamy. Try some noodles towards the end and you'll know when it's done.

It's base is ground red chili's. You can use any ground pepper. Ancho chili Chipotle chili's. Or you can add in a little extra paprika. You'll be fine without it. I've had bbq rubs with just sugar salt and pepper and loved it lol. Hope this helps.

Great question. I don't mind the fat so I didn't trim it off. The fat on mine was only about a 1/4 inch thick anyways. If you notice you go spots that are super thick I'd trim it down. Also, if you know your family and friends you have coming over are picky with fat trim it. If not it'll be fine. Hope that helps.

Literally most of the people I know have done this their whole lives.. I mean there's no difference between cooking it on a steak in a frying pan. Marinating a steak with it. And putting it on at the end.. aside from maybe a slight difference in taste and obviously stronger taste.. however it ain't so bad that you got to spit all over a good steak

The rectec is like eating at Texas roadhouse compared to McDonald's with the xl if I'm being honest. But the rectec is super pricy. I have heard pit boss made some upgrades to their newer models though fixing issues they had with inferior models. I'm considering buying one in the future to tryout.
