Pig shots are delicious little snacks made from kielbasa bacon and a cream cheese mixture. We smoked them on our rec tec 1250 for 2 hours at 250 degrees. ENJOY!

I would half the cream cheese and add some jalapeño cream cheese. That would make it perrrrrfect

Great video! Just found your channel and really enjoying the videos. When we have done these we used the toothpick in the other direction and put the toothpick through the center of the sausage and have dipped them in the cream cheese mixture which may help you with keeping the cream cheese from being overpowering. My wife loves cream cheese though so next time I make these I am going to try your method with the cupped end and I think she will love it.

Hey thanks cod the feedback! I appreciate it! That's an interesting way to do it. I think that would help cut back on the cheese taste for sure! I've thought about adding jalapeños and other things too to reduce the volume of cheese.

Mix crushed pineapple with your cream cheese or a bit of pineapple in the bottom of shot before cheese

The local supermarket sells some Polidori brand green chili sausage links gonna try this with that and a jalapeño ring as a slapper! Do you think the 2 hrs it takes the bacon to "ripen" will over cook a ground sausage? Polish sausage is more processed and seems more flexible to smoke. Nice video!

I'm not sure what will be ideal to cook the sausage. The kielbasa I used was already cooked. Two hours at 250 might be enough but that is a low temp. Seeing thats its a small piece hopefully it would cook. That sounds like an awesome idea for the slice of jalapeño. I don't know why I didn't think of that! Great idea!

@@Nicks-BBQ my wife slices jalapeños in half stuffs em with the cheese mixture then wraps the jalapeño in bacon 🤌 that's where I got the idea but I love your idea cause then the kids will eat em 2!

They look great but the only cheese I can eat is mozzarella, I wonder if it would work using mozza?

I'm not sure how that would work. You might want to find a mozzarella that won't burn or get overcooked because it takes a while to crispen up the bacon. Wouldn't want the cheese to already be super melted and oozing out by then.
