Hi, great question. For vegan/vego pho yes. I personally find the char overpowering and does not complement the fresh veg flavours.

Ir looks delicious! I wanna try! - Sidenote: I heard that resting doesn't do anything to conserve juices and encourages carry-over cooking. Can you speak to that?

Resting does encourage carry over cooking, for chicken thighs I don't believe it matters too much when compared to a medium rare steak. I find if you take perfectly cooked chicken off the grill and cut into it it'll leak out meat juices and dry out 😐...unless you've overcooked it and the juices have already dissipated.

Hi Jacqui, of course you can. Sometimes I exclusively you chicken maryland only. The key is to have chicken on the bones as that's what will allow the savoury flavours in the sauce to develop.

I made this one with canned tomato sardine by following your recipe with cilantro and jalapeno and vietnamese carrot raddish pickle bought from banh mi store, turned out to be fulfilling lunch meal... this one does not need pate and mayo for regular banh mi cause sardine itself is already fatty fish...

I don't know if it's an immigrant thing but my parents are also immigrants to the US and since I was 5 I can remember sardine banh mi's, this really brings me back everytime I take a bite.

@DuncanLu I also wanted to add that I tried banging the frozen rolls on the bench top to separate them and it only worked for a couple. After destroying a lot of them from repeatedly banging them on the counter I realised I could just microwave them for a few seconds and they separate easy!
