I had to try this straight away and i followed your cooking times and they came out so juicy and succulent. I always used to overcook my meat until it becomes hard and chewy but ive learnt the error of my ways after seeing how easy it can be made. I would love other chop recipes plzzzzzz

If you have them in the oven after the 8 mins (after they have been flipped) and put them in for 11 mins then it will be pink on the inside, 13 mins will just be enough for them to be medium to done so you get the meat to be cooked (thats how the family likes it) but also will keep its juiciness, as you can see the knife cuts it like butter, but I know what you mean, iv had things well-done in restaurants and its chewy and dry... this is not it even if you cook them for 13 mins they will come out perfectly juicy and buttery

I find that toum is very temperature sensitive, either try using oil that has been refrigerated or add ice cubes when blending. It also helps if you grind up the garlic into a paste with salt first in a mortal and pestle before adding oil and lemon juice little by little

It's a garlic and oil emulsion, a mayonnaise would be an egg and oil emulsion. Some aiolis use eggs as an emulsifier so the garlic and oil don't separate so you could call that a mayonnaise but generally it's not considered authentic Aioli.

No one uses olive oil to make toum, it affects the flavour too much. Avacado oil is a good substitute but it's too expensive.

its a smash burger so it becomes thinner, cooks quicker and believe me cooking it this way keeps its juiciness as your sealing all the goodness inside by shearing the meat
