Is the SNS pan gimmicky, I mean, some of the claims are, sure, but it is larger, and more convenient than having to build a bridge with the baskets. Would I spend $100 on it? Nope. However, if you are buying an entire grill then SNS > Weber. You get this basket with it, and don't get baskets with the Weber. Also the grill itself is much better... able to spin it, larger opening for adding coals. It doesn't have a dumb center piece that falls out when you remove the grill. And the gauge is next to the vent which gives more accurate temp readings. It also has a smoke hole and probe hole which is very nice. Also if you look at other reviews the temp is more accurate in the SNR than the Weber. The Weber has a +- 30F temp differential and the SNS only has +- 10F differential from one side to the other. So all that said, the SNR is a better grill if you are actually buying a complete grill... I've researched this thoroughly my money was either going to a Weber Performer or the SNS Grill... and the features and creature comforts of the SNS wins out.

Slice raw papaya in very small pieces(not the skin, only the inner part after removing the seeds) and use it as a tenderizer. You will get better results with it. In india, professional chefs use this technique to tenderize Goat, Lamb and Beef meat to make Bihari kebabs, Mutton tikka, Mutton kebab etc.

Hey man, I bought an OKJ Highland off FB market place for $150. It came with the tuning plates like in your video with the holes in it. Should I use them since I have them, or should I sell them on FB and go with the foil wrapped grates. My concern with the plates is that they go way past the middle of the cook chamber so instead of heat and coming from the side and over the top of a brisket, the majority of it I think is coming from below as if its a vertical smoker and thus changing the way it cooks. What do you think?

Great question! If you can get the plates to go to the middle of the smoker keep them, if not sell them and wrap the plates the way I showed in the video. More money to buy more brisket. Thanks for the question and support

I knew the slow and sear was overpriced but I liked the way it looked and functioned more than the weber baskets. I like that it is just one unit rather than two , I like the water reservoir and the size of it. thats all there is to it for me , spending $80 or $20 doesn't make a huge difference to me at all it is an insignificant amount of money either way so I got what I liked.

The expert grill is a half inch shorter than the Weber, most accessories should fit, I had to trim my pizza stone to fit though.

You can season this griddle plate just like you would any carbon steel pan just lightly oil and place in your house oven at 415°~ 450° for about an hour. Can you repeat this process as many times as you care.

An easier way to build your vertical charcoal holder is to use a chimney starter. Remove the handle and you basically just have a vertical tube with an open bottom for ashes and holes for air flow.

Salt brining should be about 1 hour per inch thickness. Otherwise it will start to toughen the meat. Which is what happened.

Have used the TTT for the last 5 years, love it! For an Acorn you can use a plate display holder spring. They use to sell them on the TTT web page. I bought some duct work so it would fit my ceramic grill. For cleaning I use brake cleaner and then a wash with dish soap.
