@MeatCranium Hey guy, no offense meant to anyone that likes a pellet smoker but they are just not for me. When I think of a wood fired oven I think of a cast iron stove where the cooking box is heated with no direct internal flame (fire outside food inside). BBQ/Grilling/Smoking IMO is direct or near direct access to the flame/heat/coals with adjustments to flame size/distance from flame/air flow/smoke retention made by the user for the most part, gadgets and gizmos allowed. A pellet grill is to me more of a convection oven, sensor controlled forced air. Much like Hank Hill's love of propane and propane accessories "taste the meat and not the heat", might as well cook indoors sometimes. I do have a friend with a $1400 dollar Traeger that he likes and does well with. Best and only mod he did was the smoke pot that blows into the temp probe hole, that's why I bought the one I did, to experiment and learn from it and what I learned is that I don't like it. Let me explain why. Besides the obvious lack of 275- 325-etc the temperature control is lacking and might have been better if it were a smooth gradient rheostat instead of a switch that clicks to preset resistors. The "smoke" setting is below cooking temp and cooking temp does not yield enough smoke, some yes but not enough. The single flame pot for the entire cook area. Some do not have access to the flame because of a solid shield, others do have a sliding section that allows direct flame but it's still a small area. Invite friends over and sear a dozen steaks over that one little spot. The feed hoppers can and do plug up and can ruin an overnight cook. The low and slow method (on mine at least) left food tough and dry even with a pan of water on the grate. 200/225/250 are no go, 300+ are ok. My friend with the Traeger cooks hot and fast so It might not be just me. On the plus side I can bake biscuits or a pie in it but I can do that in my cast iron Dutch Oven over a bed of coals too. You say burnt ends I say pulled pork. Hot Q, Cold brew, Good friends, Happy family, that's what matters. Here's to red sauce on your chin.

Thanks for the comment. It’s a comment that I hear all the time and honestly I use to feel the same way. Ovens come in different forms electrical or non electrical, I really don’t care anymore, as long as beautiful BBQ is being made. Your comment just got me a thinking about the subject a how I could squash the argument once and for all. Smoke Um any way, just smoke um. Thanks again for your support and commenting.

You try to read into the cookers too much when there really isn't anything there. No one really cares as the skill is where the pit master has mastered their pit to make them sing. If that person can do that, then I would say what you are claiming doesn't matter to anyone that has learned to make good bbq out of their pit.

It's a nice attachment but. The Recteq RT-B380 bullseye is also a 22 inch kettle grill that uses pellets and gets to 750 deg. Only $ 100 more for the whole grill with a stainless steel kettle at 399.00 free shipping. If you like the Spider 22, you'd love the bullseye.

To be fair to those who make that assertion, my guess is that they are not referring to the dictionary meaning of the word "oven" - something that cooks food with a heat source in a kitchen. My take is that they are probably speaking to how one uses an oven - Set a temperature and let it cook as opposed to a grill or smoker where a little more finesse and different skills are sometimes required. You argued a point, but probably not the point they are making.

Wouldn't a stick burner technically be a convection oven? Also, yeah, they're all ovens. But I wouldn't get a pellet smoker, I love playing with fire! And if I want set and forget I'll chuck the meat in kamado.

I use the thermostat in my brain attached to my eyes , nose, and my fingers . After smoking for 60 years without the electronic do dads I kinda know what I’m doing. When gas grills came out I thought the world had gone crazy. I’m a Spider 22 convert. When I don’t want to ramp up my 800 lb 4 foot grill with the firebox and vertical smoker that will feed 30 people and use quiet a bit of wood , yeah , I’m in for the easy way sometimes. Carry on.

I was telling my neighbor something similar. He ask me about smokers and that he bought a Masterbuilt gravity smoker, and think those are the best of all worlds. The Spider 22 is a paper weight without a Kettle, and I do love to go out there and feed my fire wood at times, and I can normally eye ball it as well, but In Florida 90+ degree Summers it is nice to let it hands free sometimes. But I have to disagree with You on a particular point.....at 3:50 you say you can not use charcoal or Wood in a pellet smoker. I've done both and I will Never burn sawdust in my pellet grill ever again. But that's just me. 😁 Metal On! \🔥/

Sounds like you need to move to a more affordable place. Costa Rica is probably beautiful but when things are so expensive it takes away from the experience.Florida is still affordable as long as it stays Conservative here.

@@meatcranium4280 You are right, my friend. My cost of living has gone up by 35% in the past three years with the combination of inflation and the devaluation of the dollar. It has lost 25% in value against the colone. Food remains relatively cheap A beautiful rack of St Louis ribs costs about $4 a pound and brisket is about the same.

@@meatcranium4280 Ribs are $3.50 a pound normally and less if you buy them on sale or the entire rack. The whole rack runs $2.65 a lb with little or no waste

@meatCranium, Do you have any opinions on WSM bullet Smokers? I once had a 18.5 inch WSM and a Traeger 075 Pellet smoker and while the Traeger was great for overnighters, I enjoyed cooking on the WSM better, more deeper smoke flavour.

I agree with your view here. Now I live in the middle of nowhere and wood is what I have plenty of. Mesquite, Hickory, Oak.....so, I am pretty much-gonna cook on Wood cause it is free and us Texicans are cheap. Basically....I got free meat and free food. Win, win 👍 👍

Technically the Spider Grills "Adapter" that you mentioned once or twice I think will only work on Weber kettles made in 1983 or later. Before that they had 3 daisy wheel type vent covers each with 4 small holes to let air in from the bottom. So, technically you can use the adapter on a Weber up to 38 years old lol......Thanks for the fun video. I want to light up a bunch of grills this weekend for the fun of it! ; )

Seeing all those smokers together, would be neat to see something like another blind test (like your steak video) with say, a 1/2 or 1/3 rack of ribs, on each smoker. You pretty much have all the types now. Offset, pellet, charcoal kettle, drum. Just an idea. 👍 Probably alot of work. Haha. Sorry if you've done that and I missed it.

I hope this isn’t a duplicate post as my first didn’t seem to go through. I think they mean any electronically controlled heat source as an oven. That can include any smoker with an adapter to control heat. The thought is less skill may be required to cook with these. I say use what you like!

Well this was kind of the argument. Back before electricity They had ovens too, However those were controlled with air, fire, and wood. I don’t really care, As long as beautiful BBQ is being cooked that’s all that matters. Thanks for the support and commenting

@@meatcranium4280 Exactly right. Even a beginner's attempt at making bbq on a $40 box-store charcoal grill is better than the best Q ever cooked by Aaron Franklin - provided that you aren't going to Franklin BBQ at the moment. Cook, smile, eat, burp, nap, repeat.

Huh. I'm debunking a rack of ribs right now. The government gave me some taxpayer money to get a pellet smoker a couple months ago. I've used it several times now and was surprised to find a definite smoke ring and noticeable smoke flavor in the meat I've cooked in it. One thing that isn't as claimed is temperature control. It doesn't stay in a 10-15 degree range as advertised, but is more like 30-40 degrees (as read off of it's internal PID probe). That being said, it turns out pretty good food; conveniently. Best of luck on the job-hunt, Chris. Time to go open my oven and spritz the ribs.

I think they mean any cooker that is controlled by an electronic thermostat. Set and forget type cooking. Not bad, just less skill required possibly.

I hear that argument allll the time and I’m guilty of it too. “Pellet smokers are glorified ovens”, actually everything is an oven it’s just the easy of use. Sometimes it’s nice to turn the knob and walk away, and sometimes it feels good to be a caveman and babysit the fire. I’m good either way. Thanks for the support and commenting
