In Japan a simple thing as bread is treated as some weird magical thing that must be turned into something not resembling bread. Then they fill it with even more weird things to make it not taste like simple bread. Why? Just stop making bread instead.

I have watched sooooo many of these Japanese pastry cooks/chef videos and I am just not understanding why an Asian country would ever turn their attention to French pastry traditions instead of developing their own Japanese pastry traditions? Why? You are not French people or even have dairy traditions let alone a love affair with butter or sweets in general. Every single one of you who are Japanese and putting these videos out for us to watch and admire, are simply walking away from Japanese sweets traditions, and yes I know that they are not as varied as the French but it’s better to developed your own Japanese sensibilities instead of copying old very old French formulas and simply repeating them over and over again which is what they have achieved. Your croissants are lovely but it’s just a croissant you spent too much time trying to go for perfection. Just saying.

Impressive for a no formal training as a bread maker, she knows her flour and particular. I would love to try her bread and sandwiches if I go to Fukuoka.

I love old japan... the NEW generation will never be like the older JAPAN, but I guess that is the same for all over the world. USA today is a cesspool... used to be great. goodbye world

Magnifique. Même nos cols bleu blanc rouge en France sont loin d'être aussi irréprochables en terme de respect de l'hygiène concernant l'obligation de porter des gants spécifiques et des masques. Bravo à ces Japonais. Des valeurs et rigueur perdus en France depuis plus de 50 ans pour une démocratie et une liberté incontrôlées par le "laissé faire" et le tout accueillir. En France des valeurs, on a fort à casser les mauvais codes pour reconstruire une France avec beaucoup d'humilité, de facto, des codes sur le respect bien oubliés.

Besides the loaves of bread, he's making like mini-pizzas/foccasias with all those veggies and cheese toppings. Looks good though and healthy..

We can see the freshness of the egg when they're orangey in color, firm and full, while the white (albumin) is thick and very rich. Those eggs will make a good bread.
