I don’t understand how people find raw squishy seedy tomatoes yummy… I never add them to salads I can cook them for a sauce or gravy or curry not for raw eating that slimy texture.

absolutely, oven baking caramelises sugars in food and makethem sweeter. I Eastern European cooking you do the same with other root veg like beetroot, parsnip, pumpkin you name it.
