I made these today 20/11/23 and they came out divine! It was really flavourful and looked exactly like ginger nuts (shop variety). It’s an easy recipe and I had fun creating them. Thank you for sharing this recipe. Bouns point- cupboard ingredients and No Egg!

I like the recipe but if you can explain what golden syrup is because it's something from England origin n in India we don't make it. Also if you can show the texture of the cookie by breaking and taking a bite, it'll give a good idea of the output to us.

Adjust the cooking time and temp ..... 160° if you have a fan assisted oven. Press them out quite thin and refrigerate a while before baking. 8-10 minutes. No one wants a burnt bottim

Do you reckon I could replace the ginger with ground cardamom? If so, would it be a straight swap or a little less cardamom seen as too much can taste soapy?

Don't use honey. It's a totally different thing. It's natural sugar syrup.

I think you can. But jaggery has a very distinctive taste. If you are okay with that why not. Also you might want to add a bit more than the brown sugar to get that amount of sweetness. The main reason to add brown sugar is because it offers more moisture to the batter. I suspect jaggery will add more moisture than brown sugar which might make the cookies less crispy.

It's a syrup that is a part of the sugar process. Substitutes you can use are honey or maple syrup. It won't give the exact taste of these cookies but it will do. There is a tutorial on KZfaq on how to make homemade golden syrup, if you like a challenge and want to make it yourself. Good luck.
