Ginger Bread Man brings back fond childhood memories, eh? Well, this Diwali, Anjali teaches you how to make those ginger biscuits you always crave for. Try out her easy, home-made recipe and treat yourself! You could also use these as fun Diwali giveaways!
Makes 16
190g plain flour/maida
1 teaspoon baking soda
1½ teaspoons baking powder
1 tablespoon ground ginger
1 teaspoon ground cinnamon
85g brown sugar, plus a little extra for sprinkling
100g butter, cut into small cubes and softened
75g golden syrup
1. Preheat the oven to 180°C / 350°F / gas 4 and line 2 baking sheets with parchment paper.
2. Sift the flour, baking powder, baking soda, ginger and cinnamon together. Stir in the sugar.
3. Rub in the butter so it resembles breadcrumbs.
4. Stir in the golden syrup, mix it together and form it into a dough.
5. Divide into 16 pieces and roll them into small balls.
6. Flatten slightly and place on the parchment paper.
7. Sprinkle with a little extra sugar and press lightly with your fingers.
8. Bake in the oven for 10 - 15 minutes or until golden brown.
9. Leave to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
The ginger biscuits will keep well for around 5 days in an airtight container.
