Omakase chef here, iwashi bones are very very small and you are often doing many at a time which a very delicate. Its not uncommon to leave them in especially if pickling them similar to kohada and kisu. Ive both removed and left them in it depends highly on the labor budget of a place, and their volume.

I always appreciate when I don’t feel any bones in these tricky fish. I don’t mind a little bit of the bones, but there was a rare occasion that the bones made my throat feel a little uncomfortable. For this course 7000 baht is too high tho. Chef who was serving you. He looks like that he doesnt have that much of the experiences yet, the way he has formed the nigiri is far off. The way he form up the nigiri like that will lose out the taste and umami by half.....

Hi 😊 thanks for your comment. I think you mean the booking fee? The 2000 yen charge should be the processing fee paid to the website use to make reservations. It’s separated from the restaurant. Unfortunately that’s how it works with reservation websites in Japan 🥺

Sharkfins are harvested illegally and often by catching a shark, cutting off its fins and dumping it alive back in the ocean to suffocate/drown. China and Japan are especially blatant about illegal harvesting under the guise of "fisheries surveillance".

I know some of my viewers are concerned about this issue so that day I asked the Chef if this was true, he explained that those methods you mentioned were used in the earlier days, and that the shark fin that he uses are caught legally. Moreover the sharks are not dumped back into the ocean, other parts of the sharks are being used in other food products like snacks and fish balls, just like any other kinds of fish. Did my first omakase experience tonight. It was sooooooo good, was surprised along the way with some dishes. Ordered some extras and repeat items because they were so good. Kept an open mind and tried some stuff I thought I didn't like. 11/10 experience, would definitely do it again. Have to thank you and your videos for giving me the courage to step out of my comfort zone

So many different kinds of sauce! From what I know there’s two types of Shoyu soy sauce, sweet sauce used for eel, sour sauce called Ponzu and many many more! Hope you’ll get to try out Omakase. You’ll be amazed! 🥰

I didn’t have that info about the price so asked the restaurant for you, Amadai Tempura is 700 baht (around $19) and curry rice is 400 baht (around $10). They have different style, Sushi Wasabi has a local, cosy vibe while Sushi Masashi is a Michelin starred restaurant. Please check both places out in my channel I have made a video for both of them.
