We combine wood and charcoal in our Karu 12. A base of charcoal to keep the heat at an even and longer burning-level, then top off with wood to raise the temperatures the final bit and to ensure good flames whenever we put a pizza in. It seems a bit more fuel efficient to us - and we still get the smoky flavour from burning actual wood.
@TomVoyageuk

Hi Tom, I just bought my oven and your videos are very helpful. I purchased a book a Ninja woodfire recipe book, but its confusing me a little. The first thing we cooked in our oven was a lovely rack of ribs, it took three hours and they were perfect, infact the best ribs we have ever had. Looking through the book its saying 12 hours!? Wow! Also the book is giving recipes to broil, is this anything you have done in your oven?

I'm looking at buying this oven. One question I have is, when cooking a Neapolitan pizza, how crunchy does the crust get? I've had reports that it's a bit softer than ideal. From looking at your bake, it's nice and puffy...but how crisp? :)
@TomVoyageuk
@TomVoyageuk 9 күн бұрын
There are so many factors that affect how your crust comes out, from the length of time in the oven, hydration, type of flour, proof time etc. what I recommend is you learn by trialling out a number of different doughs until you find one that suits. As a general rule, for a more crispy crust, go with a lower hydration of about 60% and bake at a lower temp 300c for longer about 5-7 minutes. Again though this is just a basic method, you will need to test
@merlinlepper
@merlinlepper 8 күн бұрын
Thanks for the feedback, Tom :) Appreciate it! Yeah...'the factors', there are many!! Ok, I'll take that as a 'yes, this oven will make crispy crusts. it just depends on the user' :) Thanks again

@@TomVoyageuk Just keep moving it around and all the bits and pieces come flying out and leave it spotless. Just wear glasses and keep your mouth shut and don’t do it if you’re sweaty 😅 or you could end up looking like a piece of chicken parm 😀. It actually works perfectly in less than ten seconds.

@TomVoyageuk

Using just wood is fine, and Oak is arguably the best wood to use, along with Beech or Ash. The only thing i would say is as a beginner, wood is more difficult to maintain a constant temp in the oven rather than charcoal and wood mixture.

Thanks for the video. Had been looking for a decent video comparison of the 3 different ovens and their operation. Was the koda the 12 or 16 inch? The ability to leep lots of pellets in the fyra seems really good for long cooks with minimal hassle. I had my eyes on the karu and think it still looks good as the maintaining the wood fire element seems great. If you havent already, then it would be interesting to see the karu with gas vs the koda as that freedom seems nice but itd be nice to see the difference in cook. Fantastic video and thanks very much for making it !
