People have spoken on the ‘candy’ line and how what she eats is visually similar to the red pill offered to Neo, but I think the under-appreciated part is the literal meaning of what she says: she loves candy. Think about her position in the story. She’s a computer program designed to learn everything about the psychology of humans in order to increase the efficiency of the Matrix by challenging it like a stress tester. As such, she has an inherent and unique appreciation of the nature and experiences of humanity. Some other programs show interest in parts of the human psyche and experience, but they’re simply incapable of obtaining an accurate understanding and true appreciation. For some, like the Merovingian, their interest is similar to how people view exotic zoo animals. For others, like Persephone, their interest takes the form of envy. Both groups invariably prove how little they actually understand human topics with the way they discuss them. The Merovingian enjoys sampling human language/culture/cuisine, picking the bits he likes and discarding the rest while reveling in his perceived knowledge. Persephone tries to experience human love/romance/passion through extortion, and though she knows enough about romance to warn against an obviously fake kiss, she’s still accepting of a more visually “passionate” (but ultimately fake) kiss, which shows her fundamental misunderstanding of the true nature of human emotion. The Oracle, however, genuinely loves candy. It’s not an amusement or some foreign concept to co-opt. She uniquely and purposely capable of appreciating the thing itself, whether that be something as insignificant as a piece of candy or as grand a notion as free will. One of the most brilliantly written and performed characters of all time.
