Provato la ricetta. Farina 0 12,5% proteine, 120 g di lievito madre appena rinfrescato idratazione 84%. Dopo i 4 stretch and fold si vedevano alcune bolle di lievitazione ma non assolutamente come nel video. Messo in frigo, dopo 8 ore ho fatto altri 2 stretch and fold. L'impasto non si è mai incordato come si deve, tende a stracciarsi quando si fa il window pane test. Conclusione: 84% è troppo, riproverò col 77%.

Your recipes are truly amazing! Your brownies were the best I've ever made and were a hit, and the white sandwich loaf is awesome... can't wait to make this one. Just curious, why do you prefer honey in this recipe, and sugar in the white bread loaf? Thanks!

Recipe are as follows : INGREDIENTS 1 Puff pastry sheet Egg wash for the croissants (mix an egg yolk with a little milk) Sugar to sprinkle on top (optional) INSTRUCTIONS Cut the puff pastry sheet into little rectangles, then divide into triangles. Roll the triangles of puff pastry into croissants. Freeze for 5 minutes before baking! This allows the croissants to puff up beautifully. Brush with egg wash, sprinkle with sugar and bake at 180°C (350°F) for around 8-10 minutes or until golden. (Please like my comment and pin me if u like ur fans!)

After 4 series of folds, i still dont see big gas bubbles on my dough :( do i just trust the process and continue folding for a couple more times? Hope someone can help me

I absolutely adore this recipe and I've been making it for a long time, it always wows people. A tip that I stumbled on by accident: if you want to make lots of mini cookies with this recipe, bake for 5 minutes, take them out for 5 minutes to slightly cool, then bake for another 5 minutes, and it keeps the same consistency :3
